    This basically the same recipe as the old old recipe for the pressure cooker. I add mushrooms too. Cooks for maybe 7-8 minutes on high pressure - love um.

    Thank you so much for this recipe! I remember making these with my Grandma when I was a kid! Brings back great memories! I just added in garlic, as its a favorite in our household!

    I made this tonight with my 8 & 5yr olds. They had a blast mixing up the meat, rice and extra's I put in it. While I followed some of the recipe, I did season up the meat with some salt, pepper, fresh green onions for color, a little orange pepper, 1 egg, a few tablespoons of breadcrumbs and 1/2 teaspoon of the Italian seasoning.
    I used a can of fire roasted diced tomatoes, beef broth and what the recipe called for. I also grated in 3 cloves of garlic because our family loves it and the rest of the green onion/orange pepper.
    I would make it again and again this way as even the picky 5 yr old liked it and I'm sure it didn't hurt that she helped cook it.
    Just came back from Savannah and went to Lady & Sons for lunch. Best Veggies and Fried Chicked we have ever had!! Never a bad experience when we go there!! TY Ms Deen!

    I absolutely love this recipe!!! It is so easy to make. I prepare this meal for my mother's bible study. I think there are about 20 people. They all love it. Thank you Paula Dean. You are in my prayers always and I hope to meet you one day...Lord willing.

    To avoid 'firm' meatballs, don't pack them too tight.

    To avoid dry meatballs, make sure you don't use a really lean ground meat. Fat keeps the meat from drying out. If you want to use a lower fat ground beef or turkey, add some butter substitute or some olive oil.

    After my son understood I was not actually serving him porcupine...we thought these were good. I used minute rice instead of regular and had no problems. There was a little bit of liquid left in the dish but the rice was completely done. I also put an egg in the meatball mixture and they stayed together nicely. Even with the seasonings, they did seem a bit blander than what we like, so we put a little warm BBQ sauce on the meatballs and they were great. They were fast and easy to put together, a good weeknight main meal. Will make again with my adjustments.

    The meatballs themselves turned out great! They weren't dry at all for me. I did tweak the recipe though and used a half of a yellow onion, diced (instead of the dried onion and about two cloves of garlic, minced. But the rice we used was jasmine rice and did not go well with the rest of the recipe. Some of the rice wasn't cooked all the way and the rest was gushy. Maybe I will use Minute Rice next time and keep the meatballs rice-free.
