Absolutely delicious! I used chicken instead of pork, and baked in a 350 oven for 1 hour. Not only did the house smell fantastic, my husband who hates pineapple LOVED this dish! Very easy too- I can make during my kids naps and throw in the oven when I'm ready! Will definitely make again!

Absolutely delicious!!!!!!! This has got to be one of my favorite recipes. This is so simple to make! The best week night dinner! In the winter I put the foil packages on a grill pan with a cover and cook for 20 minutes. It comes out perfect every time! I've also used both red and green pepper slices- I prefer the red but great either way!

I made this for my family and they all loved it! The pork chops were moist and the vegtables were crisp. The trick to this recipe is definetly the overnight marinade. I used a red, yellow and green pepper and a red onion and had plenty of vegetables for 5 pork chops. When assembling the pie, I also added 2 teaspoons of pineapple juice and then wrapped the foil. We used bone in pork chops and they were done in about 15 minutes. Served the pie over white rice ! Will definetly make again. Thanks Paula
