Ingredients

  • 2 cups mashed potatoes
  • 1/2 cup sour cream
  • House Seasoning, recipe follows
  • 1 small onion, sliced thin
  • 1 small bell pepper, sliced thin
  • 8 tablespoons (1 stick) butter
  • 1 1/2 cups grated Cheddar
  • 4 medium potatoes, cooked
  • 6 slices bacon, cooked crisp

Directions

Preheat oven to 350 degrees F.

Spread mashed potatoes evenly on bottom of casserole dish. Layer sour cream evenly over top. Sprinkle House Seasoning, to taste. Saute onion and bell pepper in butter; evenly layer over top of sour cream. Slice potatoes and layer over onions and bell peppers. Add butter. Sprinkle House seasoning. Finally top with cheese. Bake for 25 to 30 minutes. Remove from oven and crumble bacon over top.

Cook's Note: Leftover mashed potatoes work wonderfully in this recipe.

House Seasoning:

  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder

Mix ingredients together and store in an airtight container for up to 6 months.

    This was really an easy and quick recipe. The only thing I did different was instead of all the butter I used Smart Balance.... My wife just loved it, we actually ate the rest of it with eggs on saturday morning. I think the next time I will cut the onions up a bit more and also add some. (Onion freak.)     I was very tired of mashed potatoes by Christmastime this year and was looking for a potato recipie to complement my mother's... ham. This was the perfect dish. My kids don't like onions and green peppers so I used a mini chopper and minced them. They never even asked! I also halfed the butter as other reviews reccommended but ended up adding it anyway because the onions and peppers soaked it up and there was none to pour over the sliced potatoes. Got lots of compliments and this was the favorite dish on my holiday table.Read more

    I am cooking for Christmas and Christmas Eve and needed one more dish. I found several potato dishes and decided to try... this. In order to do a trial run, I scaled it down by 1/8th and cooked it in a French onion soup bowl. I boiled two small red potatoes, slicing them thin and mashing ? of them. I didn't have a bell pepper but that didn't matter. A quick trial run of this side dish was fantastic. I will be making the grown up version for Christmas. While the pepper isn?t required, the sweetness of the caramelized onions and the salty and crunch bacon bits make the dish. Sure, it's a heart attack in a Corning but it is awesome.
