Great cheesy potatoes! We are making them again for Thanksgiving instead of mashed. So much of this can be done ahead of time or with leftovers. Rock on Paula!

This was a wonderful recipe, so easy!! I had some leftover hot and spicy smoked sausage so I layered it on top of the sour cream as a substitute for the bacon and it was great!! I also mixed a little bit of bread crumbs with the cheese just to add a little more texture. And yes, I used ALL of the butter, lol!! I panic if I'm below a pound in my freezer, haha!

This is so delicious! I used only half a stick of butter to cook the veggies and I sprinkled some french fried onion rings on top rather than bacon. My husband kept saying " this is sooo good." It makes a large casserole so there are leftovers and I can't wait. Thanks Paula!

I made this casserole mmmmmmmmmmm good.. However there are some things Paula left out in the recipe. She parboiled the potatoes for about 6 minutes because that's the only way those chucks of potatoes would be done in the time she has allocated for this dish. I also cut the butter, I used 2/3 a cup however next time I will use either & "I cant believe its not butter spread" or just use a little shy of 1/2 a stick. I used low fat sour cream trying to cut the fat whenever I can. I did cook the dish a littler longer to as stated, but overall this is YUMMY!! very rich & has a lot of calories. I added my veggies about 50 minutes left for the 2.5 pound of grass fed stew beef chunks. I also grated a potato like hash browns for the bottom of the casserole dish, and I had more layers than Paula so it layers of sour cream & some cheese still keeping in the guidelines of recipe.

This was amazing. I used sweet potatoes instead of russets and the flavors married very well. Thank you. Found a new way to use sweet potatoes.

Loved it. Made it with the Old Time Beef Stew just as Paula did on her show - it was to die for. The men loved it!
