    I Made This The Other Night, And I Dont Even Like Onions And Bell peppers, But My Hubby and Kids Loved It. And My Kids Are One,And Two...They Were Not Picky At All!. Defiantly Making This Again.

    This was so easy and good that it is replacing the traditional mashed potatoes for thanksgiving for us. Substitute the cheese if you don't like cheddar. I used fontina.

    Super good! I went slightly off the recipe. I used 3 russets and 1 red and one white potato. I peeled the russets and left the skins on the other 2, chopped all about the same size so they would be done at the same time. When they were done, I pulled out the red and white and mashed the russets with 2 oz cream cheese, one tblespn of butter and a small handful of mozzerella. I greased a small casserole dish and layered the mashed and the sour cream and seasoned with each layer, then cheese and sliced potatoes and more sour cream and cheese. Soooooo Gooooood!

    I'm going to make it and use up some leftover mashed potatoes--what size of a casserole did people use? 8 x 8 or 9 x 17? Thanks!

    I was looking for a new potatoe cassarole and I stumbled upon this one. I am truley greatful! This was excellent! I do add some cooked hambuger to it. Tonight I also added some zucchini to the onion and bell pepper mix. We shall see how it turns out. Thanks Paula for the great Recipe!
