I have made this for company over and over, and it's a huge hit. Super simple. One time I did not have bell peppers on hand, so I used sliced roasted red peppers --WOW!!! Phenomenal! I often make my mashed potatoes using chicken or beef stock instead of butter and milk.It's terrific the next day if you can manage to have any left over! What a wonderful change from the everyday boring potato.

I think Paula Deen is trying to kill us with butter, bacon and cheese. This dish was tasty, but very greasy! Next time I'm going to use low fat cheese and sourcream, and saute the onions and bell peppers in olive oil, then drizzle the potatos with a little butter. The butter settled to the bottom of the dish after it cooled and gave me a sinking feeling in my stomach. We like the recipe, but renamed it "Paula's Baked Cardiac Arrest". It's also good with fresh garlic instead of garlic powder. If someone wants to get really healthy, turkey bacon can be used instead of pork bacon (however, even I stuck to the real thing.

Lori must not like butter - if you want to eat healthy - just don't fix and of Paulas dishes! - I brought this to a potluck and all of my co-workers loved it and made me give them the recipe before the end of the day - If you cook in oven the night before or early am and then microwave 5-8 minutes right before serving, it comes out just perfectly - makes it a great item for a potluck!

I love Paula - and enjoy watching her show, but this will be the last time I try one of her recipes. I only used half the butter, and when this came out of the oven, the potatoes were swimming in it! I drained off the excess and tried it. The consistency of the mashed potatoes was so thin and very unappetizing. The flavor was pretty bland. The ducks seem to like it, so they have been eating well this week. I really felt like I could clog an artery if I ate this.

Wonderful!! I added crumbled cooked bacon to the mashed potatoes. This is great! The melted cheddar topping makes it absolutely delicious...

This was wonderful. My husband and 2 year old gobbled it right up and asked for more. This would be great as a side dish to ham. Next time, will add 1/2 the butter though. Thanks again Paula!
