    I made these with the leftovers from Thanksgiving - excellent! I used more green onion than the recipe called for (which I think is a typo and they came out really crunchy and flavorful.

    These were the best!! The green onion really added to it. Mine hardly broke apart.Good tip spinkle bread crumbs inside the frying pot to keep it from breaking Great Recipe

    I came home late from work and still had time to make these. Served with frozen fish sticks, they really "classied" my dinner! I drizzled leftover lemoney hollandaise sauce over each and were they ever good! Very sticky but easy to shape. Didn't use green onion, just onion powder. I will put crab in them next time.

    Is there a mistake in the quantity of chopped green onion? 1/2 teaspoon? Unless she meant onion powder or dry onion pieces, how would you use such a tiny amt. of fresh chopped green onion? I used a whole "Tablespoon" plus and it was barely noticable with so much mashed potatoes.
    Also there was no temperature for the oil-----any guesses?

    It's a easy recipe. A bit tricky to keep your hands from getting sticky at each roll. I prepared it right before I went to sleep and fried them in the morning.

    This is the most wonderful tasting potatoe croquettes, I have ever made or tried and there even better with cream of chicken over top of them.I use to hate potato cakes but these are the best.

    I tried every suggestion, and watched Paula make these on TV and I still had trouble keeping them together. They looked ugly but they tasted incredible.
