This soup was delicious. I did add shrimp as recipe called for.
It turned out much better than I expected.
I also added a 1/2 cup frozen corn, an extra cup of milk (didn't need half&half, a little more bouillon and a dash of Old Bay Seasoning and 4 pieces of crumbled bacon... and the potatoes took more like 30mins to boil.
My Daughter and I really loved it. Thanks Paula!

I absolutely luv this recipe. However I did add a few ingredients of my own. I left the shrimp whole and added some blue crab claw meat, I also added two handfuls of shredded sharp cheddar cheese when it was done cooking. Last but not least, I added some of my own special "cajun" spices. I served it with some homemade garlic-cheddar biscuits. My family luv'd it so much I think I'll make it for our reunion in June!

I thought it had way too many potatoes vs. everything else. It needs like half the potatoes called for by the recipe. All I could taste was potatoes and milk.

I found this recipe when I was trying to find something for both me and my husband to enjoy. I don't eat shrimp but I figured that I would be fine with the potatoes. IT WAS AMAZING! It is truly a favorite in our house now. You can't go wrong with Paula Deen!

My family and I made this tonight. It is an excellent soup paired with salad, but since we didn't have shrimp we went with corn and about a 1/2 lb of shredded medium cheddar -- and since we're in NM we also added green chilis! It was amazing and very filling. The kids are all screaming dibbies on the leftovers for tomorrow - but I think Dad's in the lead!

I made this soup twice - the first time I followed the recipe to the letter, and found it to be too bland. The second time I sauteed two cloves of garlic in the pancetta drippings, and added that to the onions and carrots. I also stirred about 1/2 cup of cheddar right into the soup, just before serving. I garnished it with LOTS of cheddar, pancetta and chives. I omitted the shrimp and used corn, as the shrimp does nothing for the potato soup, and the soup does nothing for the shrimp. I found it to be a waste of good shrimp. My husband loved it the 2nd time around!
