I think that this soup is amazing. When I made the soup my whole family fell in love with this soup and I am only 16 years old. My mother is even making me make the soup right now.

I've made this soup several times now and each time I've omitted the shrimp entirely and it is a hit! Reminds me of my grandmothers' potato soup growing up in Atlanta! It soothes the soul. Serve with some grilled cheese sandwiches on a cool evening and it don't get no better! And it's good on the pocketbook, and in this day and time, serving a delicious hearty meal that economical is really saying something. Thanks Paula for bringing back such great childhood memories! This soup is a hit everytime!

Easy for a college student to make and very yummy. I added 1/2 lb of shrimp and a can of corn. Did the cheddar, bacon and dill garnish. Very yummy touch! I think celery would've been good, too, but I didn't have any, so I added some celery salt to taste (bc it wasn't salty enough for me.

I just finished making / eating this soup. Though there are some things I would change, my husband thinks it's perfection. I read a lot of the reviews and made the following changes: I added two stalks of chopped celery, three boullion cubes, a few shakes of Tumeric, seasoned salt, and a half cup of colby/jack blend. I had about a quarter cup of leftover creamed corn so I added that. I chopped up some roasted chicken, bacon and sprinkled that with more cheese on top. Oh...I also added chicken broth and omitted the half and half. The soup was very thick. The next time (and there will be several next times I'm going to steam the potatoes so the soup comes out a little creamier and doesn't take as long to cook. I might omit the carrots (or use fewer of them and play with herbs (rosemary, chives or try a southwestern version (roasted poblano peppers, chili powder. I agree that this is a wonderful base on which to build. I would have given this recipe five stars had it not been for what I think was a misfire on the cooking time.

This was an excellent potato soup. This time around I used leek instead of onion and threw in a bit of white wine when sweating the leeks and carrots. I also added extra liquid chicken stock and some baby spinach. Threw in the chopped raw shrimp at the end to save a step, they were lovely and tender. My fella loved it.

I have made lots of potato soup over the years but this is the best ever. I cut my potatoes quite small but it still took a long time to cook them. I added clams instead of the shrimp this time but will try it with the shrimp next time. I added one diced up rib of celery. Hubby loved it! Definitely a keeper! The crisp bacon and shredded cheese are perfect toppings.

I've tried so many different potato soup recipes with not much luck. I came across this one and gave it a try. It is awesome! So delicious and easy to make too! I've never tried it with the shrimp, but it is heavenly with the corn.
