Ingredients

  • 18 (1-ounce) squares white chocolate
  • 3 cups skinny pretzel sticks, broken into small pieces but not crushed, then measured
  • 2 cups dry salted peanuts

Directions

Line a rimmed cookie sheet with parchment or waxed paper.

Melt the chocolate in a double boiler over simmering water until smooth, or melt in the microwave in a 2 quart glass dish. Microwave on high (100 percent) for 1 minute, stir, and microwave on high for 1 minute more. If necessary, microwave on high for 10 seconds more, and stir until the chocolate is melted and smooth. Stir in the pretzel pieces and peanuts. Stir well with a flexible spatula.

Spoon onto the prepared cookie sheet, spreading the mixture out so that ingredients are relatively evenly distributed.

Allow for the chocolate to cool for several hours or refrigerate for about 45 minutes, until firm. Break the bark into irregular pieces, like peanut brittle. Store in cookie tins, or package in Chinese food take-out cartoons lined with waxed paper.

    Oh, Lord - this is good. Love the sweet/salty combo. I used the Ghiradelli squares and they melted just fine in the... microwave. I made gift baskets for family a couple of Christmases ago and these were a hit. The only problem was I didn't seem to give enough! This has become a holiday must-have at our house.     Paula Deen, you NEVER let me down!!!! VERY tasty and will be great to use for HOLIDAY GIFT BASKETS. Thanks for the quick and... easy and very tasty snack. I am not sure why so many people are having problems with melting the white chocolate. I melted in the microwave exactly the amount of time you suggested 2 min and 10 sec, and it melted perfectly. The only step I added was breaking up the white chocolate in the food processor. Can't wait to try your other barks to see which one will be my favorite. Thanks agai n for the recipe.     I am not sure why people are having so much trouble melting the white chocolate chips? I use white chocolate a lot. I have... melted it several times in the microwave and double boiler and have never had a problem. I have always used the chips to melt too. I thought the white chocolate was wonderful in this recipe.Read more

    Jennifer, you scared me, so I made half the recipe with milk chocolate chips and then did the second half with white... chocolate chips. Microwaved both for a minute, stirred, another 20 seconds, stirred, and then another 20 seconds. Both types of chips resulted in the same consistency so maybe it was the type of wc chips you used.     I am sure this recipe is to die for, but I wouldn't know since I ruined it by trying to use white chocolate chips. I didn't... think it would be an issue to use chips vs. squares, but apparently there is. I used a double boiler on low and I ended up with a clump that looked like mashed potatoes. I took a chance and then moved to the microwave (if it was already a lost cause, then microwaving wouldn't hurt it--but if it melted in the microwave, it would be a bonus). And it didn't get better or worse. It just looked like it needed some moisture, so I added a pat of butter and it just made it more malleable, but not smooth. I ended up spreading the chocolate mush on the wax paper and pushing some of the nut/pretzel mixture into it and it was edible, but definitely not pretty. I then melted milk chocolate chips and peanut butter for the rest of the mixture just so I didn't have to run to the store for more white chocolate. I wanted to give this five stars, but just couldn't since I had so much trouble. I think they should take into consideration that most people will have chips vs. squares, and write the recipe accordingly.Read more

    I love the combination of salty and sweet, but for this one I found it TOO sweet. The kids liked it though :)
