I made these a while back for my gluten-free neighbors using garbanzo bean flour and they turned out great! Super moist! I am going to make them again this holiday season for my recent gluten-free father-in-law using half garbanzo bean flour and sweet rice flour.

Make sure you leave these bars in the oven long enough for the center to fully cook. Sometimes even when it looks done in the over and you pull it out - after they cool the center is a little gooey and caves in - so if you're baking them for an event give them enough time to fully bake.
If you're like my family - if you pull it out a little too early the dense pumpkin center of the "mistake" is the favorite part!

I made these for Thanksgiving this year and they were a big hit. The bars were moist and full of pumpkin flavor. The frosting was perfect on top. The bars kept well and were even better the next day.

Great, easy recipe. Very moist and tasty. It's basically a pumpkin cake. And wonderful with the frosting. Yummy!

These are definitely more like cake than bars. I was expecting dense bars, but instead this is a deliciously moist, wonderfully pumpkin flavored cake that is tasty with or without the frosting! I haven't made a PD recipe yet that wasn't fabulous.

I made this last night, with the only substitution being that I swapped the cinnamon for an equal amount of pumpkin pie spice. I personally think this is more of a cake than a bar, but it is absolutely delicious! I thought it was good the night I made it, but it is even better the next day! Hubby and I both agree that this tastes like a pumpkin roll, and I didn't have to go through all the fuss of rolling it! I will DEFINITELY be making this regularly!

These pumpkin bars were fantastic. They were moist and delicious without the icing. They were heavenly with the icing. I will continue to make these bars for Thanksgiving every year.

I do not understand these "bars" at all. It was like eating an old, wet sponge that tasted just faintly of pumpkin. Threw them in the garbage. Almost ruined my holiday meal, but was able to quickly whip up "iced pumpkin cookies" These were fantastic! Make these instead.
The only reason I gave it 2 stars and not 1 is because the cream cheese icing is delicious. I used it to ice the pumpkin cookies instead.
