Excellent recipe. I made this for the first time a few weeks ago for a holiday party and it was a hit with everyone. The only thing I did different was I used gingersnap cookies for the crust since I happened to have them on hand. I also cooked mine in a water bath and there was no cracking on top. I also needed to bake mine for 1.5 hours and it was still a tiny bit soft in the middle so I will add another 10 minutes to my cooking time for the next time I make it.

I thought, and friends thought it was just okay. Tried using cinnamon whipped cream and didn't like that.

FANTASTIC! This is a wonderful recipe just as it is! We like more pumpkin & spice at my house, so I up both quite a bit. For guests though, I make it as it is. I cool cheesecake in oven w/wooden spoon in door, after I turn heat off. Never had a crack so far. THANKS PAULA!!!!

This is an incredibly easy dessert to make. And it was such a huge hit this past Thanksgiving. My guests who don't like cheesecake said that they absolutely loved it.

This was my first time making a cheesecake and it was DELICIOUS. I've made it a few times since, and seem to have perfected the cracking issue: I bake as usual but have a 9x13 of water on the rack beneath it. When it's done, I leave it in the oven for half an hour with the door closed (NO peaking, that's how it cracks then crack the door for another half an hour. No cracking! Looks gorgeous!
