I wanted something different for this Thanksgiving and I decided to make this cheesecake. I never thought I'd hear my family rave as much as they did. They actually said it was better than the one we had bought from a famous store here in New York last year! I followed the recipt exactly except I took the advice of another person and baked it in a water bath. Then, after it was done, I left it in the oven with the heat off, cracked the oven door just a little, and left it in another 45 minutes. I had absolutely no cracks at all. It was picture perfect.

I'm not a big cooker, baker...but I was determined to make a pumpkin cheesecake for Thanksgiving. This recipe was so easy and everyone loved it. I used ready made crusts( didnt have a spring form pan and it made 2 delicious cheesecakes...even better! Thank You Paula!!!!! Now I have requests for me to make it for Christmas!

Although if it was, I'd be as big as a house! This has been the absolute hit of our holiday meals thus far! My brother said it was the best thing about Thanksgiving dinner. I didn't have cloves, so I simply left them out the first time I made it, but it didn't seem to make a bit of difference. Everyone raved. The batter was a little thicker the second time I made it; I'm not sure if I didn't do something quite right, and I added some orange zest this time - again, no cloves - but it still tasted great. Super simple and easy, easy! Thank you, Paula!

This is the first time that I have ever tried baking and lets say that even though there were other options for dessert, this is the one that was gone and people are still talking about how good it was almost 3 weeks later! What a great recipe. I don't think that you could go wrong with this one. On a personal note, I didn't use any ground cloves simply because I didn't have them but I don't think that I missed out on anything!

I think the sour cream kept this from being too heavy and the combination of spices were ideal. I loved the added cinnamon in the crust--it was festive without being overpowering. Mine also cracked (skipped the water bath but didn't mind since it was only served to family. Best pumpkin cheesecake I have made, by far!

Thank you Paula for sharing your delicious pumpkin cheesecake recipe with all of your fans. It was a nice change from the traditional pumpkin pie at our Thanksgiving day dinner table. Everyone loved it! I will be sure to use this recipe again and again.

and this recipe was great. Everyone loved it and it was easy to make! it is very rich annd most took 1/2 of one of he 8 slices- it could serve 16 if pepole are conservative with their dessert consumption.

Oh wow... this recipe was fantastic!!! it's one of those recipes that looks like you've worked all day but it was probably one of the easiest cheesecakes i've ever, ever made!!! The flavors and consistancy of this cheesecake put this over the top!!! The crust was so delish... Thank you Paula!!! Happy holidays!
