Oh, how I love this recipe, let me count the ways!!! This is my second most favorite pumpkin recipe next to Paula's Pumpkin Cheesecake recipe! I've made this for Thanksgiving dessert and have received rave reviews from my guests! It's always been a huge hit and it's so freaking easy to make!! The best part is that it's so light and fluffy and delicious! YUMMY!!! Thank you Paula for giving me many different recipes so that I can switch up my Holiday menu from year to year!!! You ROCK!!

This is a great recipe. I made it for thanksgiving and it was a big hit. I would just reccommend one small change when you make it add some walnuts to the gingerbread for a little crunch. The walnuts also compliment the pumpkin puree very well and you can also use the walnuts as toppings.

I love this recipe!!! I have tweaked it a bit throughout the years to suit my tastes. Please feel free to take my suggestions as your own, and get creative with this recipe.
1- It is best to use the cook&serve, all the complaints about the watery/soupy happened when I used instant pudding, the cook&serve. 2 For a more homemade taste, I made my own whipped cream instead of cool whip. Also you could try this little trick. Take your cool whip and mix in 2-3 teaspoons of vanilla extract before you layer it...give a less sugary taste to it.3 In the pumpkin/pudding mix- I also add nutmeg, and in equal amount.4 I usually bake my gingerbread a day ahead to let it sit and cool well ahead of time 5 You might try some toasted pecans or walnuts between the layers and on the top.7 If you trifle bowl is too small, which I even the largest is for this recipe, I just use clear wine goblets or juice glasses to make individual servings.

if you want something different to wow your friends for thanksgiving, i think this would be it. Mine was not as pretty as Paula's though. I think next time , after the gingerbread cake layer in the bottom of the trifle dish, i would put the whipped cream next for a better contrast in colors. Mine turned out a little mushy too, maybe adding a thick layer of crushed cookies between the cake and whipped cream would be good.

Extremely easy to make. But I substituted a 9x13 spice cake that I baked and cubed for the gingerbread. I'm not a big gingerbread fan and the spice cake made it that much more moist.

I just made this for Thanksgiving. There were ONLY 3 of us,so I proportioned the recipe accordingly. MY father devoured it. Pity the poor people who did not sit down at my table! I will try it the next time with Chocolate wafers instead of Ginger Snaps--but just to have my own version. Paula---this rocks!

I was looking for something different and this was definitely it! Made the mistake of purchasing pumpkin pie mix instead of just pumpkin (thank goodness for my husband's willingess to run to the store... again as the pumpkin and pudding mix was extremely runny. Second time around, I did use instant pudding and everything turned out great. Unfortunately, everyone was so stuffed from dinner we didn't even get to the desert. Tried it today for lunch and really was impressed. Great Thanksgiving dessert.

A Thanksgiving tradition in our house for years! This is an amazing dessert. We love the unique combination of flavors. When I read the ingredients in this recipe many years ago, I wondered how this could even be good. But it is delicious! A must have for our Thanksgiving table!
