I made this cake today. I loved the crust and the flavor was great. I used sweet potatoe instead of pumpkin, delish. However, it was way way way too sweet. I like my desserts sweet but this was over kill. I had to bake it an additional 15 min and the middle was still loose. Once it set for a while, it did tighten up some. I will make it again with a few adjustments. In fact the filling will be my new sweet potatoe pie filling when using a crust.

When I made this, I tried using mini muffin pans because I wanted to use them as individual desserts. They came out very sweet. I think it is the cake that was sweet. Not to my taste but my husband liked them. I had a lot of filling left so I put that in a deep-dish pie shell & baked. Now that was good! Kind of a different version of pumpkin pie!

I have done this recipe many times for many crowds- all of whom loved it. Recently, I tried her son Bobby's more nutritious version. It is a different flavor (a tart vanilla, but equal quality. The company I served it to (who had also tried Paula's version liked it. I think the consensus was "I like Paula's recipe better, but I really like this too". What people liked best about Bobby's was the "less bad for you" part. The crust tastes exactly the same, but Bobby's version calls for a 9x9 pan for the same amount of crust ingredients. (Paula's is 9x13, You'll have left over mix with Bobby's (or a way too thick crust. I also found his recipe to be cheaper, because I already owned most of the ingredients. Anyway, consider giving Bobby's version a try, unless you are doing this for the pumpkin flavor.

This recipe is my favorite fall cake. It's easy; I added everything together before I realized that there were steps, and it was still wonderful. Got rave reviews from guests.
