I loved this recipe, i read the reviews before i made it. I used the strawberry jello and only 2 cups of sugar, it it delicious! I can't wait for next year for more figs and i will also try it with peaches.

This recipe is in Paula's Lady & Sons Savannah Country Cookbook, using strawberry jello. So easy and delicious! I agree with the reviewer who said the raspberry is too sweet, I would think so, too. Strawberry is the jello to use for this recipe. DH just brought in some fresh picked figs, so I will be making preserves tomorrow and give as Christmas gifts! I also made some peach preserves a couple of weeks ago. Did anyone see Paula's show today, she made some extra spicy salsa, using a recipe given to her by an 11-year old "budding chef," but Paula admitted there was way too much jalapena seeds and was way too hot for her. It was a LOL moment!

Easiest thing I have ever done canning!! I used big sweet fresh ripe figs that were to the over-ripe almost mushy stage. I substituted Splenda instead of sugar and used sugar-free strawberry jello. Really Great! Can't wait to share with my Pops. He has a huge fig tree!! Thanks Paula Deen! U done did it again!!

Are the figs dried figs, or the fresh ones?

While ease of preparation and texture of final product could have resulted in a 5 star rating, the flavor, which is the ultimate goal, was awful. Sickly sweet fake raspberry flavor was not what I desire in fig preserves! Perhaps Strawberry jello might have been a better option?

Every good southern cook should have this recipe in their recipe box. My grandmother and I would make this recipe (except we always made strawberryevery year when her figs were ripe. Now my father makes these preserves when fig season rolls around, and he makes every flavor under the sun!! Great recipe to try if you've never had homemade fig preserves!!
