This recipe is easy, quick, and delicious. I used jarred roasted peppers since I had some in my fridge. It made for a perfect lunch with a caesar salad. Thank you, Paula!!

My family absolutely loved this recipe! So much so that my 7 and 9 year old were talking about "those awesome scallops" for days. The only thing I did different was I soaked my scallops in milk for about an hour before-hand. This really brings out the juicy sweet flavor of the scallop.
