    Best potato salad ever!! I add in extra peppers and and chop my red onion in chunky pieces ..Everyone loves it!!

    This is my favorite potato salad recipe. Be warned, it has a lot less mayo and a lot more vinegar flavor than the average potato salad. After making it multiple times I now only use about a 1/4 cup of white wine vinegar instead of red wine. I also add a half clove of garlic. Everybody always seems to really like it :

    I love potato salad in general but this recipe is fantastic! I didn't have dijon mustard so I used regular mustard and added honey, which I think using regular mustard gave it a little more of a kick and the honey toned down the acidity from the vinegar. I did add more mayo to make it a bit creamier. I also added boiled eggs and dusted it with cayenne pepper before serving. Delish!

    I hate potato salad normally, but I can't stay out of this stuff! I added about a TbL of honey to cut down on the after bite from the vinegar, but I try to put honey in anything. : I also used red bell instead of green bell (didn't have green bell, so that gives it a sharper taste. SOO amazing! This will be a repeat for sure!

    Just whipped this up ahead of time for our family cookout tomorrow. Easy and delicious! I added some sugar to the dressing to cut down on the acidity of the red wine vinegar and did 1 tbsp. of mayo and 1 tbsp. of sour cream. I think I'll add some bacon in the morning.

    I made this recipe, and am still eatin' off it. It's quite good. However, the 5 minute "prep" time touted on the recipe is only accurate if you have a family of 4 and give each an item to chop.

    The leftovers make great fried potatoes for breakfast! I took this salad camping and we had it for dinner. Then in the morning, we threw the leftovers on the griddle [no additional oil needed], added some scrambled eggs and meat, and put it all together for breakfast burritos. For the recipe, I used half the amount of potatoes and dressing ingredients, but still used the full amount of peppers and onions. I used green AND red peppers, and added some parsley to help give the salad color. As with other comments, the vinegar aroma is strong when first mixed, but let the flavors blend in the fridge.
