Super good, but WAY too much dressing. However, if you don't pour all of it on the potato, you can save it for a salad. I added celery, and feta, it was awesome! Also, don't put your face over the bowl after pouring the dressing on the hot potatoes...it hurts!

Paula conjures up a creamy vanaigrette that adds a tangy punch. It's German potato salad meets traditional mayonnaise potato salad. Since I had a sweet red pepper on hand, I used that and it added a little sweeter flavor than the stronger flavored green pepper would have. We loved it.

If you like tangy, this is great. I grew up on vinegar in my potato salad (my mom is German but this was a little too tangy for me. Still MUCH better than that gloppy mess called traditional potato salad though. Next time I will use an extra tablespoon of mayo and just 1/4 cup of red wine vinegar. Also, watch the video, she puts green onions in it. I like the other commments that suggested bacon over the top too, that would be tastey.

I'm going to let it sit overnight and see if it gets better but I thought it needed just a llittle more kick of something as well. Next time I'll try using rice wine vinegar like others have suggested. I also will try roasting the potatoes and see if that makes a difference.

Love this type of potato salad - mayo, egg,celery, not so much. Some posters said it needs more flavor. Try using Japanese rice wine vinegar instead of red wine vinegar. It is a little sweeter and not so tart. Also, you can add just about any other type of diced vegetable - celery, scallion, small carrots if you don't like bell pepper. A trick I learned is to dice your veggies and let them marinate in the vinegar/oil mix for a while before putting in the potatoes. This kind of softens them a little and blends their flavor. This is very refreshing and you don't have to worry so much about it spoiling on a hot day.

I was never a big potato salad fan. Never cared for all the egg and mayo of traditional potato salad. I'm sorry you traditional fans....but store bought or homemade...traditonal is just a mess. This is a very refreshing change of pace. Presentation is great, actually looks like a fresh salad....and it has something traditional doesn't....flavor!!! Served this one up as a side to a Carolina BBQ featuring smoked pulled pork and a vinegar based coleslaw. Paula's Red Potato Salad passed the true test....no leftovers. Next time will garnish it with some crumbled bacon. Thanks Paula.

This was the best non-traditional potato salad I've ever had. One of the commenters below mentioned that the bell pepper didn't do anything and actually took over the salad. I highly recommend you dice it smaller. Also, if you let this sit over night, it's even better. The pepper becomes part of the overall sauce flavoring as opposed to individual hits of green pepper. Great job Paula!
