These were awful. Way too oily with the vegetable oil instead of butter. The oil leaked out of the cupcake papers and left an oily mess on the platter. Icing not good either. Sorry! Definitely need to return to the testing kitchen on this recipe. Had to throw over half away, no one at the July 4th party liked them.

These were a great hit on the 4th of July. I doubled the cocoa powder for the cakes and cut the frosting recipe in half and everything was perfect. Red and blue sprinkles for the kid's version and pecans w/mini chocolate chips for the adults. The icing is so much better than canned cream cheese. It is definitely worth the extra effort.

I took these to a 4th of July celebration and everyone went crazy over them. They were more popular than the fried pies the caterer served.

I made these cupcakes for a 4th of July Party and everyone loved them! I used a tad less oil and less powdererd sugar in the icing, but they were still delicious. I also used 2 tablespoons of cocoa instead of 1 to give it more flavor. I knocked the rating down a star b/c the recipe wasn't as good as a piece of red velvet cake I had in a restaurant in Savannah, GA -- that cake was denser and SUPER moist and delicious. This recipe is still great, though. I would make them again. I think they taste even better the next day =
