    for a barbecue and they were ABSOLUTELY DELICIOUS! Those who said they were "bitter" and "not sweet enough" must have done something wrong, or, like that poor fellow on the sub shop commercial, been "born without taste buds". In fact they're almost TOO sweet! My frosting came out on the runny side, too, but I remedied that by adding a bit more powdered sugar until it was of the right consistency. Sometimes you can't take recipes too literally and have to adjust a bit.

    I made these cupcakes for a company BBQ and everyone loved them. The only down fall is that being in South TX, it was too hot to leave them outside. They were best served from the fridge. Moist and light. Love the frosting. One batch actually frosted 5 dozen cupcakes.

    I made these for my best friend's daughter's first birthday, and they went over GREAT! Her husband, who isn't normally a sweet eater, enjoyed them immensely! Tasty, easy, moist and delicious recipe!! If you're going to pipe the frosting, chill first. Chill cupcakes after frosting as well so they will "firm up". Will DEFINITELY be making this one again.

    For years I have been searching for a good flavor tender moist red velvet cake.
    It's one of my son's favorite and all traditional recipes are to dry, this one isn't and, the taste is great.

    I cut back on the oil in the cupcake recipe by half for health reasons. The frosting is fantastic, and works best when chilled.
