These cupcakes are awful. I was skeptical because the recipe required do much oil. That's all I taste. They are the worst red velvet cupcakes ever. I would have done better with the box cake mix.

We love these - only change I made the second time around was to double the cocoa -- like a little more flavor. The frosting is the best I have ever had -- I could eat it with a spoon.

This is my second time making the cupcakes, the first time I added a bit more to the recipe, making it crunchy, but so moist on the inside. This time the batter came out a bit more liquidy then last time, and I don't know why. Currently in the over they look fluffy, but since I didn't have enough flour, which I am missing half a cup, I think that's what made a difference. I added more cocoa powder to use a bit for flour, and some brown sugar.

I tried this recipe, but the cooking time is too long. I baked at 350, but they started to burn within 19 minutes!

All I could taste was the oil. I followed the directions to the letter and just thought the cupcakes were awful. I read some of the reviews ( after instead of before making them and can't see how adding more chocolate could make them better. Actually, I wasn't going to rate it at all, but to post it, I needed to put something in that box.

I made 18 regular size cupcakes and 24 mini's from 1 batch @ the exact 2/3 full.
I adjusted the cocoa to 1 TBL instead of 1 tsp., for just a little more hint of chocolate flavor. I also used apple cider vineagar, don't know if it made a difference.
The minis baked for only 13 minutes.
Both sizes were light and fluffy with a tiny bit of crust. The chocolate flavor was perfect. We'll see if anyone can tell the difference, since I bought a box mix just in case these didn't turn out. I'll let you know.
