These cupcakes were not rich like Red Velvet should be, However they were Very moist. And the frosting was good! But deffinetly didn't wow me.

But the recipe makes WAY more frosting than you'll need for 24 cupcakes. You could make half and that would be plenty. But the cupcakes and the frosting are both great!

This was so disappointing! Not enough chocolate, sugar or red color. I was expecting a deeper richer cupcake. The frosting was delicious! I halved the recipe, but added more sugar and a tsp of half and half when it got too thick.
Will try a different recipe next time.

I am not a huge baker, but i wanted to try this yummy recipe. They set up beautifully and looked really good. But there was a bit of a funny taste. I can't put my finger on it. I've never had red velvet cake before, so Im not sure if that is what it's supposed to taste like. Anyway, they are really good, just different tasting. I put shredded coconut on the tops for a perfect Christmas treat.

I am a novice baker- and these cupcakes made me look like a pro! I did not experience any of the problems others listed below. They were moist and flavorful. I did use 1 TB of cocoa instead of 1 tsp and the frosting was too much. I threw half of it away. I almost want to say that the frosting recipe is for a double batch. Cut it in half and you will have more than enough. I toppped my icing with green and red sugar and they were beautiful!

If you do a search on Food Network's website for CakeMan, it reveals the same ingredients. I don't know if Paula got it from him or he got it from her. Either way, these cupcakes are soooo delicious. I made a 3 layer cake out of this recipe first. The amount of icing covers the entire cake. The next time I decided to make cupcakes. They both was a HUGE hit. I will be making them for a Pot Luck luncheon on Monday and then again for Xmas.
