    I made these exactly how the recipe says last night. They are fabulous! My husband -who is not a big sweets person-ate FOUR! Only two things I will change next time - instead of a teaspoon of cocoa I will use a tablespoon and I will cut the icing recipe in half. It made WAY too much. Also, I used splenda instead of sugar and for the icing I used one regular cream cheese and one reduced fat - you can't tell at all and saved a few calories. These make a great christmas party favor when sprinkled with green sprinkles!

    I Love this recipe. My 3 year old son and I made the red velvet cupcakes for his classmates and they turned out soooo delicious. I couldn't believe how flavorful and moist they were! I tried other red velvet recipes, but Paula's stands out from the rest, hands down!!!!!! Just Fabulous!!!! Thanks Paula,

    The cake was tender and moist but the icing was terrible. Maybe one stick of butter and one 8 oz. cream cheese would improve the texture. The strange taste that some people aare complaining about is the "bite" of the cream cheese. I piled it in the cupcakes and it dripped off. I ended up with about a cup and a half of extra frosting that I threw away. I make a red velvet cake with butter and powdered sugar that is far superior to this frosting.

    I've heard so much of Red Velvet cake, its a Southern "thing" Never had any till now, it reminded me of the cake in the movie
    "Steel Magnolia" red and all.
    It turned out soooo BEAUTIFUL and really delicious! It is a very easy recipe.
    The person that complained that hers came out like a hockey puck must not know how to bake! Not your fault Paula!
    I will make it again and again!

    These cupcakes were so easy and so yummy. I didn't have any of the problems that some other reviews mentioned. I made half of the recipe, baked them for 18 mins and they were moist and delicious. Thanks Paula for a great red velvet recipe!
