Ingredients

  • 2 (15 1/4-ounce) cans sliced beets, rinsed and drained
  • 1 1/2 cups crumbled feta cheese
  • 1/2 cup pitted ripe olives
  • 1/4 cup chopped fresh dill
  • 1/2 cup olive oil
  • 1/4 cup rice wine vinegar
  • Salt, pepper and garlic powder, to taste
  • Dash hot sauce

Directions

Remove broiler tray from oven and coat with nonstick cooking spray. Replace tray and preheat broiler. After beets are drained place on coated broiler tray. Place under hot broiler, turning every 2 to 3 minutes until edges start to brown, approximately 8 to10 minutes. Remove beets from oven and allow to cool. Mix remaining ingredients with cooled beets. Toss and serve.

    You must use older, big (1 to 2 feasts beets for any beets salad. Older beets have more sugar and much greater and better taste. Do NOT use fresh, from the garden, beets for this salad or you will be disappointed. In answer to tuckmeisNH try using older beets or canned variety.

    My husband hates beets, but I made this for a dinner party one afternoon and he LOVED it! It's a favorite of ours, and is very easy to prepare. This will make regular appearances at my dinner (and lunch tables!

    How'd you know I'm the Beet Freak of Dallas, GA? I just made this and I can't stop eating on it. It'll probably be gone before the family gets home for supper!

    I already had to open another can of beets and roast them! I hope I can leave some to marinate overnight because I know it will be even better tomorrow.

    I vacation a lot at Tybee Island, so I hope to stay at your new cottage in Savannah the next time I book with mermaidcottages.com
