You must use older, big (1 to 2 feasts beets for any beets salad. Older beets have more sugar and much greater and better taste. Do NOT use fresh, from the garden, beets for this salad or you will be disappointed. In answer to tuckmeisNH try using older beets or canned variety.

My husband hates beets, but I made this for a dinner party one afternoon and he LOVED it! It's a favorite of ours, and is very easy to prepare. This will make regular appearances at my dinner (and lunch tables!

    Paula Deen!

How'd you know I'm the Beet Freak of Dallas, GA? I just made this and I can't stop eating on it. It'll probably be gone before the family gets home for supper!

I already had to open another can of beets and roast them! I hope I can leave some to marinate overnight because I know it will be even better tomorrow.

I vacation a lot at Tybee Island, so I hope to stay at your new cottage in Savannah the next time I book with mermaidcottages.com

You so crazy, girl! Don't be hating if you see me with purple lips cause I'll eat a beet!

    Best regards,
    David Barwick

Not a keeper- I feel like I wasted fresh from the garden beets- I grilled them to cook them and added grilled red onion also- it was just ok- I would not make it again- I do agree with the others when they say the beet juice turned everything red- maybe if there wasn't so much liquid added to it?? I'll never know- but I'll keep looking for a recipe for all my fresh beets!

Who thinks of these combinations? This one is a huge success. Used fresh beets. Leftovers tasted even better on day two!

No one in my family likes beets so I don't have them very often. I was pleased with this recipe because it was different. I think it had good flavor. I added a bit of salt, pepper, and garlic powder. I would make it again. I rated it good because I did think that it looks nasty. The feta on the beets with the olives and dressing just isn't very pleasing to look at. This tastes a lot better than in looks.

We love Greek salad and this was a fabulous variation....prepared as directed and added red onion, fresh tomatoes and served over baby greens. We loved it and will serve often in the summer and at partys.

No one ate a single bite. Not only did the dish have little flavor (except for the feta cheese, but it looked awful.

I love beets but was hesitant that the feta and olives would make the salad to salty. It was very tasty and not salty at all. My mother and husband loved it and he doesn?t even care for beets. I?m defiantly making this again.

My husband claims he did not like beets, so I did not tell him what I had planned to make for dinner. He loved it and said it "was a keeper"!! I added some slice almonds for some extra crunch. Will keep this recipe and make again.
