Roasted Brussels Sprouts with Lemon Zest
- 3 pounds Brussels sprouts, trimmed and cut in half lengthwise
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons lemon zest
Preheat the oven to 450 degrees F.
In a shallow baking dish or roasting pan, toss the sprouts, olive oil, salt and pepper until combined. Roast, stirring occasionally, 15 to 18 minutes. Sprinkle with the lemon zest just before serving.
