    So delicious! I put non stick foil on the bottom of my pan; it really helped keep onions from burning and food from sticking.

    Delicious. I only had a red onion on hand so I didn't use the fennel but it was still delicious. I love roasted fingerling potatoes and this recipe will go into my permanent repertoire. I love the bacon and bacon fat!

    Thank you Paula for making this my favorite Valentines Day! My husband LOVED these potatoes, even more than the shrimp main dish I made!!! I also made the Lady & Sons Salad which was also a big hit ( and everything was so easy to make ~ I almost felt guilty!.

    These were excellent. I served them at a dinner party last night and there was not a single morsel left and everyone asked for the recipe. I will definitely be making them over and over. The only change I made was to add a little olive oil as it didn't seem as if I had enough bacon grease to thoroughly coat the potatoes.

    Even better, I cut the potatoes and stored them in cold water in the refrigerator a couple of hours before my guests arrived so there was less I had to do when my guests were here.

    This is another absolute winner. I cannot rave enough about the wonderful blend of flavors. The onions and fennel perfectly complimented the potatoes. If you are concerned about letting the onions and fennel getting too dark, placing them on top of the potatoes will help, but we loved the heavily caramelized flavor of the deeply cooked veggies. This one belongs in everyone's recipe box!

    I made this for my husband and we both loved it! I didn't have fingerling potatoes so I used Idaho potatoes, and I don't eat pork so I didn't use the bacon but added seasoned salt to give it a little bit of flavor...the onions caramelized beautifully, and the flavors all together were just so satisfying, and cooking was super easy. I will definitely be making this again very soon!

    However, the onions burned when they were on the bottom. The next time I may put them on top of the potatoes, but the flavor was fantastic. We even dipped them in sour cream and that was good too. Thanks Paula!

    I cut the recipe down because I was making it for 2 but it was amazing. This was our whole supper. It was so good I never bothered to make anything else. Forget the steaks go with this.
