This is soooo easy to make and it is amazingly delicious! If you're a fan of blue cheese you will absolutely love this salad. I agree with what many others have said, it needs a little green at the end to liven it up. My dad was a little skeptical when I told him what I was making but he loved it and went back for seconds!

This is a very good recipe for potato salad. It is really good when it's been at room temp. so that the blue cheese is creamy.

This has become our "version" of potato salad when we come to the party. Was a hit at tailgate and now making it for the Fourth. I used grill seasoning on the potatoes but otherwise follow the recipe. I too add something green at the end to make it look better, parsley or chives, but this is a tasty change from the traditional.

This is the ugliest salad I've ever seen! haha No joke but who judges a book by it's cover? Not I! I added a little parsley just to make it look a little more appealing & add some green. This was the BOMB! So good! I also added a couple of dashes of Tabasco to liven it up not that it needed it, just coz I'm a pepper addict. I'm calling this Paula's "Blue Moon Salad" and I will make it again, but only once in a blue moon or I'll have to take up jogging!
    Thanks Paula!

Thank you Paula for this AMAZING recipe! I made it with all the ingredients listed and both myself and my husband LOVED it! The carmelized onions combined with the tang of the blue cheese was so tasty. You gotta try this!

I made this over the weekend and it was soooo good. I have never made potato salad because my husband won't eat it, but I thought I could win him over with this variation, and I did. The only changes I made were to use 1/2 butter and 1/2 olive oil to caramelize the onions. Forgot to get horseradish at the store, so I just threw a little hot sauce in. I did have to thin the dressing with a little milk. We had friends over for dinner, so I made it all ahead of time and warmed the potato/onion mixture in the oven right before dressing and serving. My husband loved it, ate two helpings for dinner and more for lunch yesterday. This one is a keeper!

I made this for my family and they LOVED IT!!!!! I am making it for a family gathering to celebrate my mother's birthday, I'm sure they will love it too. As for the appearance, it looks like it wouldn't taste good but once you bite in you will thoroughly enjoy it. It was easy to make, that's always a plus. I highly recommend this recipe to anyone who wants to try something different than the traditional potato salad. It is much richer in taste and texture. Thank you Paula! You have never disappointed me with any of your recipe's.
