    I tried this and was very happy with the way it turned out, I have never been a big fan of lamb, but with the mint, cucumber salad it was very refreshing. If you like lamb or just trying it for the first time try this one it is a great combination.

    I hate cuks & goat cheese>!
    I heard mint works wonderful Lamb.
    How about fingerling potatoes With house season & olive oil.
    Precook till almost done then add to lamb pan won't the flavor of the lamb be good on the potatoes!

    I do not have a cast - iron skillet. I use a heavy - bottomed pan or the outside grill to brown racks. I have noticed that to get the lamb racks medium - rare, I must leave them in the oven @ 375 for 40 min. Aside from the time difference, this is the easiest recipe yet ! Thanks to Paula Deen

    I made this recipe for Easter and found it to be amazingly easy and delicious. The salad goes great with the lamb. I also made the zucchini custard and everyone in my family loved it!

    Thankyou "Anonymous". I missed the seasoning part as well and went to the recipe and thought that just pepper is wrong. I'll try this one now. Thanks again. I put 4 cuz I don't know yet but her recipes are pretty good.

    On the show Paula added "house seasoning", but the recipe only calls for cracked pepper. I was not paying close enough attention and was depending on the recipe to have the ingredients. If you only use cracked pepper the racks are not going to have very much flavor.

    I had never cooked a rack of lamb before but tried this for Easter meal. It was so easy and the most delicious taste. I also fixed ham in case my husband didn't like the lamb but he loved it. Thanks so much Paula for giving me such a great recipe.
