Ingredients

Turkey:

  • 8 tablespoons butter, softened
  • 1 tablespoon House Seasoning, recipe follows
  • 2 tablespoons chopped fresh parsley leaves
  • 2 tablespoons minced shallots
  • 2 tablespoons minced garlic cloves
  • 1 (15-pound) turkey
  • Stuffing, if desired

Glaze:

  • 3 tablespoons butter
  • 1 (12-ounce bag) cranberries
  • 1/2 cup maple syrup
  • 3/4 cup cranberry juice
  • 2 teaspoons apple cider vinegar
  • 3/4 cup apple cider
  • 1/4 cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Turkey:

Directions

Preheat oven to 375 degrees F.

In a small mixing bowl combine the butter, House Seasoning, parsley, shallots, and garlic. Thoroughly rinse and dry the turkey. Tuck the wings underneath the body and place the turkey in a roasting pan. Rub the butter mixture all over the turkey. Stuff, if desired.

Roast for 18 minutes per pound (including stuffing weight, if using). The turkey is done when an instant-read thermometer is inserted into the thickest part of the thigh (and deep into the stuffing) and registers 165 degrees F. and the juices run clear. Remove from the oven and loosely tent with foil. Let rest for 20 minutes before carving.

Glaze:

Combine all ingredients in a small saucepan over medium-high heat. Bring to a boil and reduce heat to medium-low. Let simmer until the cranberries burst, about 8 to 10 minutes. Strain the mixture through a sieve and let cool. Reserve for turkey.

House Seasoning:

  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder

Mix all ingredients together and store in an airtight container for up to 6 months.

    This was the first Turkey I've ever cooked and it was wonderful! I loved how my kitchen smelled while making the glaze on the... stove (I reccomend covering the saucepan or you'll have a mess to clean when the cranberries burst). I followed a lot of advice from this section as well: I added sliced oranges and fresh Rosemary to the cavity of the turkey while it roasted. I made a double batch of the glaze and used half of it to baste the turkey and poured the the last half over the turkey after it was done. I also tented the turkey from the beginning to be sure not to burn the skin. The directions are pretty straight forward; not too difficult, but it's a lot of work but well worth it!     The Best Glazed Turkey Ever!

    I made this turkey for both Christmas and Thanksgiving with huge success! This was my first time making a turkey and they... both were a huge hit! My three kids ate the Thanksgiving (a 14 pounder) turkey all that same day! I glazed my turkey the last two hours with this glaze and used the rest as a type of gravy. Another variation I performed was brining my turkey overnight before I cooked it with an Alton Brown brine recipe. The turkey was so moist it melted when you tried to cut it.     Turkey Perfection and Flying Blind

    Greetings from Texas! My Fianace?s mother saw your show and presented this recipe as a different way to make our turkey this... year. Needless to say there are nerves involved when trying a recipe for the first time, especially on a family holiday. So flying blind we dove into the recipe and our turkey turned out beautifully. Some slight adjustments to the recipe included: 1) We made the seasoned butter the night before and removed it from the ice box the next day about 30 minutes before the start to prep the turkey. 2) Since we did not stuff the bird, we put a good amount of the house seasoning inside the cavity of the turkey. 3) We cut the temperature to 325 degrees for the entire cook time. 4) We had a 12 lb. turkey and roasted it in stages; we put it in the oven covered with foil for the first hour of cooking/roasting. Then we took the bird out and put on the glaze, back into the overn for the second hour of roasting (foil was removed at this point). We repeated the glaze for the third hour of roasting and glazed again when we removed the bird from the oven at the 3 hour and 30 minute mark. The color of the Turkey looked like a picture in a magazine (or on the FN website!) and it smelled wonderful. The meat was very juicy and flavorful and this is a recipe that we will use in years to come.     OMG this was the best turkey I have ever made and I have made quit a few! We had a houseful of family and they all loved... this turkey they couldn't get enough! My brother in law in California is moving out here to TN next year and says his is better and wants to make it for all of us next year, but the family all agrees that him and I should have a throwdown next Thanksgiving! Thank you so much Paula for such a tasty bird. :) I will let you know who wins next Thanksgiving! I am also making this again for Christmas because we all loved it and I want leftovers this time!
