    Excellent, pretty much the traditional recipe I've used for aeons. After all the meat is gone, let the fat sit and solidify. Saute onions, cook eggs, whatever. Cook eggs and add the sofrito... There are zillions of uses for everything in the pot. The rice is also very similar to the rice I make, but had no olives. I added some roughly choppedo! olives and magnific

    Hello, I LOVE Paula Deen! I was amazed when I saw a recipe that was so similar to the Puerto Rican food I've been eating all my life. My grandmother and mom who were born in Puerto Rico have cooked the pork roast and rice the same way. I've cooked Arroz con Gandules which is rice with pigeon peas for many year and the lechon, which is the pork roast. Great ingredients and flavorful food! Enjoy!

    WOW, WOW, WOW! Roast was a huge hit with hubby and 3 teens (didn't make the rice - love Paula's Mexican Rice recipe. Was worried about the amount of garlic cloves, but roasted inside the meat, everyone loved it! I made 1/2 of the sofrito recipe, which still made 1 cup sauce (froz extra. Couldn't find Sazon seasoning so found recipe to make own (1 Tbs. each of: ground coriander, ground cumin, paprika, garlic powder and salt = 1/3 cup Sazon. Use 1.25 tsp for each packet called for in recipe. Next time I plan to make a larger roast so we have more leftovers (yum!, cover the pork with the sauce and marinate overnight.

    Just pulled this out of the oven. Like several others used a boston butt roast about 3 1/2 pounds. The 3 hour cooking time was good. When they browned it at the end on the show they said 450 but the website says 400. So did it @ 425 for 10 - 15 minutes. Also used fresh parsley in the sofrito instead of cilantro as hubby hates. The sazon seasoning is easy to find but there are different kinds. Paula and Aaron used the one in the orange and white box which contains no annatto (yellow color. Think that is best for the roast as wouldn't want a yellow bird. However for the rice the one in the orange and yellow box is better since has the yellow color/flavor. There is also a 3rd kind in orange and beige box which has both annatto and coriander. Since much like cilantro OK if you like but if not do not use this one! Cooked the rice the tried and true way about 20 minutes. A real quality recipe which makes for a great dinner. And very budget friendly as well... Thanks!

    Very tasty! The meat was wonderfully tender. 3 hours at 300 and then 20 minutes at 400 was perfect. Made both recipes exactly as written. Purchased Sazon seasoning by Goya (found in the latin isle at the grocery store which has MSG. Next time, I will make my own Sazon seasoning as I can taste the MSG in the food. To speed things up, I may also buy premade Sofrito sauce which is also available in a jar in the latin food isle. This is now a keeper in weekly dinner planner.

    The prep was very easy considering my grocery store had everything I needed. And as the meat roasted the smell was incredible! My roast was 5.8 lbs and took over 4 hours to cook. Needless to say Dinner was not at 6:30 as planned.Thankfully, my guests were gracious. Finally, when we sat down, everyone said it was worth the wait. I wonder if I turned up the temp for next time if it would be ok. Suggestions??

    I didn't make the pork, but I did make the rice, and it was fabulous. I improvised, being I didn't have the pork, I sauteed 2 pieces of bacon in the pan. The taste was just like my friend who cooks Spanish Food all the time. The homemade sofrito was on the money!!! Very easy and tasty!!! My family loved it!!!
