Ingredients

  • Cooking spray
  • 2 tablespoons olive oil
  • 2 tablespoons finely minced garlic
  • 2 tablespoons fresh minced rosemary
  • Salt and pepper
  • 16 large new potatoes, scrubbed and cut into relatively uniform chunks

Directions

Preheat the oven to 350 degrees F.

Spray a glass baking dish with cooking spray. Place the olive oil, garlic, rosemary and salt and pepper, to taste, in a large re-sealable plastic bag. Add the potatoes, seal and toss to coat evenly. Pour into the prepared baking dish. Roast the potatoes for about 30 to 40 minutes until crisp on the outside and tender on the inside.

    I have served this dish several times and it has always been a hit. My family loves it. Not only does it taste awesome, but it smells amazing too. Love it, love it, love it.

    This recipe was foolproof and took no time to put together. I used all 2 tbsp of rosemary chopped even though it seemed like a lot. I also seasoned with a lot of salt and a little pepper. My husband & guests raved about them. I used baby dutch potatoes & cut in half or quartered depending on the size. I served as a side with chicken and a salad. Fabulous and sooooo easy. Will make again & again as a standard.

    I cut the rosemary in half other than that i did not change the recipe. It was delicious and super easy. I will definately make this again and again. I cut the potatoes into about 1 1/2 inch pieces and 40 minutes was the cook time.
