Ingredients
  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 3/4 cup panko
  • 2 cloves garlic, minced
  • 2 pounds salmon fillets, skinned and finely chopped
  • 1 large egg, lightly beaten
  • 1 tablespoon soy sauce
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt
  • Cooking spray
  • Sesame Mayonnaise, recipe follows
  • 8 buttered and toasted sandwich buns
  • 8 lettuce leaves
  • 8 slices tomato
  • Sesame Mayonnaise:
  • 1 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
Directions

In a medium bowl, combine peppers, panko, garlic, and salmon.

In a small bowl, combine egg, soy sauce, lemon juice, and salt; add to pepper mixture, tossing gently to combine. Form mixture into 8 patties.

Lightly coat a grill pan or skillet with cooking spray. Heat over medium-high heat until hot. Grill or cook patties, 5 minutes per side, or until desired degree of doneness. Spread Sesame Mayonnaise evenly over toasted buns. Top each with a lettuce leaf, tomato slice, and salmon patty. Cover with tops of buns.

Sesame Mayonnaise:

In a small bowl, combine all ingredients. Cover and chill.

Yields: 1 cup

These were exceptional and my guests couldn't stop raving about them. I made them into sliders. I did add some extra bread crumbs to help them stay together better. Once they got a good sear on one side they were much sturdier. I cooked them ahead of time on a griddle and then warmed them up a bit in the oven and they were not dry at all. Delicious!!! This was the first salmon burger I ever made, and I don't see any reason to try a different recipe. Make sure to chop the bell peppers pretty small, it helps with the texture. I've made them a couple hours early and let them chill in the fridge before cooking...fiance said they stayed together on the grill just fine for him. I added a couple chopped scallions, and added sliced avocado to the toppings. I would highly recommend adding avocado! The sesame mayo is great too. These were delicious!!!! I added a bit more panko crumbs to hold them together and grilled them on a vented pan on the grill so they wouldn't fall through. The sesame mayo adds a nice flavor. Didnt have Panko used italian bread crumbs instead, used egg beaters instead of eggs and only added lemon juice to mayonnaise. Despite all of the modifications It still tasted great! Its fast and easy as well as healthy! Love it! item not reviewed by moderator and published

OMG good! I saw it on tv while Paula was making it. I happened to have all the ingredients, I made it the next day! I mix some of my smoked salmon with the salmon; I replaced red pepper with chopped broccoli with red onion. I made cold slaw, Asian style, the night before. I wish you could see the photo! Delicious! Rave reviews from all members of our family (ages 3 to 37!. REALLY good on sprouted grain buns! We didn't do the peppers as I have one who would not have eaten them with either green or red "stuff" in it! We did have trouble keeping them together to put on the grill, so we opted to set them on tin foil on top of the grate. Worked great except we forgot to oil the foil first. So when we went to flip they were stuck to the foil. My husband flipped them and then peeled to foil off after the started to sear on the other side. We didn't use any toppings, just a bun that had a crunch from being grilled for a few seconds. Yum! These were fantastic! Now, I am not much of a salmon eater (it is my boyfriend but I thought I would give these a go and it was great. Lovely flavor, texture, and very moist. I sometimes dry out salmon but with this recipe it is very hard to do ( probably the egg. I would definitely recommend the recipe. I did substitute onions for the peppers since he isn't a huge fan. These were full of so much flavor, I did make a few changes like the other viewer. I followed Ina Garten recipe for roasting the salmon. Instead of adding soy sauce, I added worcestershire sauce & 1/4 of a red onion. My husband loves salmon so the burger was a hit with him; my daughter do not care for fish but she liked the burgers. Unbelievably good! I followed the recipe exactly except I added a little heat in the form of a red chile pepper from my garden. Oh and about a quarter cup of chopped onion. Chilled them in the fridge for about a half hour before grilling them on a pretty hot gas grill preheated to 375 degrees. 8 minutes total. 4 times 2, so you flip and rotate them every 2 minutes. They held together perfectly. Also I used non fat mayo for the sauce, egg beaters instead of the whole egg, and some "Can't Believe" butter and really I don't think anyone would be able to tell the difference. My wife's comment was that this was the best thing she has eaten all year. Somebodies hint about freezing the patties for 20 minutes was helpful as I could see the patties easily coming apart. These are good, but I think I made mine better by adding about a half cup chopped onion that I sauteed with the peppers. I also added about one tablespoon lemon zest and about 1 tsp cajun seasonings. What sent this over the edge was to roast my salmon and then cut and cube it up. The roasting gives it such a wonderful and complex flavor. I got the idea of Ina Garten the Barefoot Contessa and she was right. Her recipe is pretty similar except she puts mayo in hers and she didn't use lemon. The best I've ever made. To the salmon mix also added 1 teaspoon of dried parsley, 1/2 cup chopped onion, 1/2 teaspoon black pepper and some lemon zest in addition to the lemon juice. To the mayo added toasted sesame seeds and doubled the sesame oil. Even though my son doesn't care much for salmon he loved it. Really good and easy to make. I added black pepper to the salmon mixture, a bit more garlic and upped the soy sauce some, too. Next time I think I will add more lemon juice as well. I put the patties in the freezer for 20 minutes before I pan fried them and they held together with no problems. I made the mayo sauce as directed. I made six burgers with this. They fit the bun perfect. Glad I didn't stick these on the grill. They would've fallen through. When I put these in the pan they fell apart and I had to quickly scramble to smash them back together. They did hold up once they were cooked, but maybe another egg would help bind them together. The sesame mayo was a good addition but a wasabi mayo would rock these. They need a little kick. I didn't add salt and pepper while mixing, maybe that would help. This was a wonderfully easy recipe. I followed the recipe exactly and came out with six, well-sized, burgers. I pan-fried them with olive oil and they stayed together perfectly. I recommend using fresh salmon, as I used packaged frozen fish and it led to a slightly fishy taste. I also made the seseame mayo, which gave a wonderful taste to the whole sandwich. A cup of mayo is A LOT of mayo, so I recommend perhaps starting with a half of the recipe and then adding if you need more. Oh my gosh this recipe is DELICIOUS! The sesame mayo is fantastic, and the burgers themselves were to die for! I put the patties in the freezer for about 10 minutes before pan frying- they stayed together really well. My 2 year old even cleared his plate! I highly recommend these. I just made these 'burgers' for a Mother's Day potluck (my 78 year old mother is a fish lover!). I made 12 patties by increasing the recipe 1.5 times. I also used 3 eggs. These were really delicous! We did not butter our rolls, but we tried a burger with the roll toasted and then untoasted. We felt the toasted roll disguised the salmon flavor. I made the recipe for the salmon burger, but I don't eat a lot of bread and did not use buns. So, I lightly coated the burgers in panko before a light saute in canola oil. It was just right (not a traditional burger, but I loved the crunch the panko coating achieved. I also used an Asian sesame dressing from a bottle instead of the mayo dressing. It was awesome! Super delicious. I was looking for a recipe to use up some salmon which I'm not really very fond of. The combination of red pepper, garlic and sesame mayo made a delicious burger. I baked mine in the oven on an oiled pan and then turned. I had no egg so I substituted egg whites from a carton. They did not hold together as well without the egg and that's why I baked them. Was looking for a heathier take on the standard burger and saw these on your show this weekend. Since only two of us, I cut recipe in half. They were delicious. We just made these and they were awesome. I did add 3 finely chopped green onions to salmon mixture. I did let them rest together for about an hour then grilled on our BBQ grill (using the veggie basket for the cooking vessel. We added Sushi pickled Ginger on the sandwich as well. I love this recipe I've made it 3 times now and every time they were great! I always did it a little different every time but I ALWAYS used sesame crackers to make my panko and also grilled them using sesame oil. The taste of sesame and the salmon go very well together. Was looking for an easy fresh salmon burger recipe. (Those frozen store bought salmon burgers are not good at all!) I had everything in the house that this recipe needed (just had to get the fish!). I decided on processing the salmon instead of taking the time to chop the salmon. The burgers were very wet, so i added a little more bread crumbs and partially froze them before I cooked them. I had some left over and they froze perfectly. They are very delicious and super easy! I did not get a chance to make the sesame sauce, I will have to try it next time! I used Paula's recipe as a starting point and added my own flavors and used some substitutes because of what I had in my kitchen. I added fresh chopped basil, just a little bit for some green color and fresh flavor. I substituted Honey Nut Cheerios for the Panko or bread crumbs because I didn't have any in the cupboards. Added extra whole grains and a slight sweet flavor. I used Arnold Sandwhich Thin buns instead of big fluffy buns for lower calories and so that we didn't fill up on the bread and we could taste the salmon. I also skipped Paula's mayo and used left over sauce from another Food Network Recipe. I used a mixture of 1/2 cup Greek Yogurt (plain low fat), 1/4 cup chopped capers and 1 chopped shallot. I also topped off the burger with spinach and tomatoes because of what we had available and served with sweet potato fries! I loved how Paula added the peppers and the other flavors. Thanks Paula! I have never tried salmon burgers before I made your recipe, and how did I get so lucky! My husband loved these as well, and he usually balks when I tell him we are having salmon of any kind. I am passing this recipe on to my son for him to enjoy. These are awesome! I subbed 2 6oz cans of salmon and then cut most of the ingredients in half (but still used 1/2 cup of panko, almost 3/4 cup finely chopped peppers, 1 whole egg and the juice from one half a lemon). I also added about 1tsp of chopped fresh dill and 2 finely chopped purple scallions that I had on hand from my CSA. I made home made hamburger buns from a Recipe Zaar recipe and it was so good! I loved this recipe and I am not a huge fan of salmon! I think what really makes this recipe good is the layering of flavors, so making the mayo and using a nice slice of juicy tomato really brings out all the nice flavors. I read all of the reviews, watched the video, and then made salmon burgers and the sesame mayonnaise to serve to myself and guests. No one liked the recipes. This burger recipe is delicious! And a pretty quick meal as well! We halved the recipe and ended up adding more panko to help the burgers stay together. We also served them on onion rolls. Paired with garlic and parmesan oven-roasted potatoes (and a light ranch dipping sauce) and brocolli spears. I agree with a previous reviewer - the sesame mayo dressing was perfect - even with the use of a lo-cal mayo! This mayo really set off the flavors of the salmon. I found this one and thought it looked interesting, I've always used leftover slamon for burgers or salmon cakes. These where very good and moist, the mayo was perfect as is, no additions. I had been planning on making salmon for dinner last night, but was going to marinate and bake it as I usually do. I happened to see this episode yesterday and was so excited to try it! I used green pepper because that is what I had on hand, but otherwise made it as written. I did not have the sesame oil for the mayo, so I left it out. I did add chopped green onion to the mayo and it was great! I would highly recommend this recipe and suggest the addition of the green onion with the mayo.
