Ingredients

  • 2 fillets canned salmon, flaked
  • 1 egg, beaten
  • 2 tablespoons green onions, diced
  • 1/2 cup bread crumbs
  • Vegetable oil, for frying

Directions

Over medium heat, heat oil in a medium skillet. Combine canned salmon, beaten egg, green onions and 1/4 cup bread crumbs. Form into patties and dust with additional bread crumbs. Fry until golden brown, about 2 minutes on each side.

    My mom used to make these when I was little. I have gone to restaurants and have found some too dry or tastless. The only... thing that I added was some Old bay seasoning as suggested by some of the other uses and a little black pepper. Read more

    Kim...next time buy the cans of boneless, skinless salmon. It cost more but is less trouble.

    This is a very easy Quick recipe with the exception of can salmon. I was horrified to find out that can salmon has skin and... bones. It took some time to get the skin off and remove all of the bones. I will never use can salmon again it was a terrible experience. The recipe is so simple and delicious.     I didn't throw away the leftover wild Coho salmon I couldn't eat last night because I remembered Paula's quick recipe for... croquettes. As this wasn't 'a plan' I substituted fresh chives for green onions as I have them growing on the terrace and Panko bread crumbs as I didn't have regular ones handy. As I only had a small quantity (enough for two croquettes) I saved a bit of the egg and some panko and when the croquette was formed I dipped each in the bit of egg and then the Panko and fried them.     I made this tonight for my family and they LOVED it!
