These were very yummy! although they did appear dry after putting it all together I did like some of the other reviews, I added an extra egg and mayo. They turned out marvelous! I served it with smothered fried potatoes and buttered biscuits. See Sandra Lee's croquette recipe for her remoulade sauce. It really complimented the croquette. Thank you Paula Deen

These were the best Salmon Cakes-Croquettes I ever had. I took adalley's advice and added a second egg. I also took shell39's advice and made a white sauce with green peas to go on top. So very yummy and not hard at all.

The Croquettes were delicious. I added lemon juice and mayo. I also used two eggs. Loved the flavor... I made a sarracha mayo to go on top and put it on a bun with lettuce and tamato.

I liked these as well. It did appear a bit dry so I added some light sour cream. And yes, letting them set in the fridge first is best. Instead of a tarter sauce I added lemon juice and some zest to light sour cream. Adds a different flavor. Go Paula!

The patties were dry so i added 1/4 cup of mayo and only put 1/4 cup bread crumbs. I added some salt and pepper for taste. I also added some celery and green bell pepper for flavor. You can also make white sauce to put on top of patties

This must be an old southern recipe, maybe from the depression, because my mom has been making these for years using canned salmon. I make them too, and Paula's recipe is the basic recipe.
I add a TBSP of lemon juice if I've got a lemon on hand, and sometimes use 2 eggs. Add pepper. It really does help them hold together better if chilled in the fridge for a while.
I'm making these for dinner tonight, and came here looking for a yogurt dill sauce :

I love salmon patties! Use the receipe you prefer but the best best part of them is when you add cream sauce on top. Heat some butter and flour to make a roux and some milk to thicken. I like to add salt, pepper, and a little chix stock(powder can stuff, this is a in a hurry receipe! Add some green peas (from frozen bag in freezer Pour over top-yummy,yummy!!! To dry for me if you do not make this for top. Takes minutes! Kids eat this up!!!!

Thought this was a wonderful salmon croquette recipe. I, too, followed earlier reviewers and added some old bay seasoning as well as some salt and pepper. I also dipped the croquettes in cornmeal before frying instead of coating the outside in breadcrumbs. This recipe is definitely a keeper!
