This recipe was exactly what i wanted and i messed it up (by adding all breadcrumbs to mixture instead of 1/2 and it still came out perfectly. No crumbling at all when fried. They actually tasted like chicken croquettes they were so mild. I used 2T of minced onion instead of green onion and it was fine.

I saw this recipe on TV and immediately wanted to use it but, I didn't have any salmon so i used canned tuna. I also added some bell peppers and garlic. It came out delicious even though i am not a very experienced cook. I highly recommend this recipe because of how easy it is to take the concept of the salmon croquette and change it to hundreds of different dishes.

I had lots of cans of salmon, but sick of having the old salmon and pea wiggly on toast. I tried this recipe and it was so easy, and delicious !!! The adult kids asked when could I make them again. I made a nice white sauce to go over them, yum !!! Thanks Paula !!!

I made these by adding a few tablespoons of mayo along with everything else. They came out moist and perfect!

I tried this with some leftover cold poached salmon and added a splash of hot sauce and chopped dill, and served with a little lemon and salt. Some homemade tartar sauce on the side and it was delicious!

Paula has another simple yummy recipe!

I like this very much. I made a white sauce with chopped hardboiled eggs and cooked some diced yukon gold potatoes. The sauce went over both the croquette and the potatoes. Delicious and filling.

Made this tonight for dinner. It was quick and tasty. I used Italian-style bread crumbs and added black pepper to taste. I doubled the recipe to get 10 croquettes, each measuring about 3 inches in diameter and 1/2" thick. We squeezed fresh lemon juice on cooked croquettes. Made a quick aioli (sauce using lite mayo, dry dill, ketchup and black pepper. My husband loved it!
