    I really like this salmon croquette recipe but I do make some changes when I make them. I add salt and pepper and a pinch of sugar because it really compliments the salmon (without making it sweet. Adding a pinch of sugar is a southern thing and we add it to just about everything to add a little balance. I also use Italian breadcrumbs, add a few dashes of garlic powder and use canola oil to fry them. I do end up having to fry them longer than two minutes on each side though. These are delish and also work with tuna instead of salmon in a pinch!

    This is my go-to recipe for salmon patties. They taste just like ones my mother used to make for me as a child. They are also one of my husband's favorite meals. The addition of the green onions gives it an extra bite that I really do enjoy. Serve with a lemon wedge and a green salad and enjoy!

    No groceries in the house but I had two cans of salmon so I came across Paula's salmon patties ....so I mixed and cooked and they came out great thanks Paula.

    Even my kids liked these, and they don't like anything. We didn't have any green onions, so we mixed them up without it. However, I added some lemon pepper seasoning to the mix and then sprinkled with more lemon pepper after frying. Absolutely delicious. Also we needed 3 eggs to get them to stick and used panko bread crumbs.

    These were the best! My 13 yr old is now insisting she doesnt like fish. She does love Tuna though. I fixed these and she loved them! But now she says she only likes these and tuna salad. LOL

    I added some spices and made this for my mom. She is very very picky as she used to cook professionally( have you ever noticed that these are the worst people to go out with or cook for. She loved them. I loved them as well. A must try, they are quick and easy and this recipe could transform into burgers pretty easily!

    My wife and I threw these together very quickly using fresh salmon baked in the oven. Also we used Canola oil instead of Vegetable oil.
    "MMmmmmmm good," is all I can say. These were sooooo good, Moist on the inside and crisp on the outside. Reminded me of my mothers....maybe better.

    We made a sauce to go with them 1 Tbl spoon mayo, 1 tsp, hot sauce, 1 tsp
    lemon juice and dash of oregano

    Kind of creole slightly hot.....we loved it.

    I made as directed but used white onions instead of green, and they were still good. BUT! Try toasting buns and take a couple spoonfuls of mayonnaise, T. of Soy Sauce, and some dill weed and mix together in a sealable container. Spread mixture on the buns and make GREAT salmon sandwiches! They are super tasty!
