    My mom used to make these when I was little. I have gone to restaurants and have found some too dry or tastless. The only thing that I added was some Old bay seasoning as suggested by some of the other uses and a little black pepper.

    Kim...next time buy the cans of boneless, skinless salmon. It cost more but is less trouble.

    This is a very easy Quick recipe with the exception of can salmon. I was horrified to find out that can salmon has skin and bones. It took some time to get the skin off and remove all of the bones. I will never use can salmon again it was a terrible experience.
    The recipe is so simple and delicious. I did add some Ole Bay seasoning and fresh ground pepper.

    I didn't throw away the leftover wild Coho salmon I couldn't eat last night
    because I remembered Paula's quick recipe for croquettes. As this wasn't
    'a plan' I substituted fresh chives for green onions as I have them growing
    on the terrace and Panko bread crumbs as I didn't have regular ones handy.

    As I only had a small quantity (enough for two croquettes I saved a bit of
    the egg and some panko and when the croquette was formed I dipped each
    in the bit of egg and then the Panko and fried them. Delish!! Thank you, Paula!

    I made this tonight for my family and they LOVED it! I made the recipe my own with some added seasonings along with the cajun fried okra and some cajun slaw that I made (my own recipe with a great cajun dipping sauce and my mom told me it was better than hers!! How great is that!!! I will make this again... Thanks for recipe layout Paula!! Love your show!

    Yummy and so easy to make! I added a little dijon mustard, garlic salt, and seafood seasoning. So quick...will definitely make it again!

    These are so easy and so delicious! My husband loved them and he grew up on the east coast where seafood is a religion. The only thing I added was some spice, a few seasonings to give it some punch (celery salt, garlic salt and a pinch of ceyenne pepper and they were absolutely delicious. These I will make again and again.

    Why Paula calls these Patties Croquettes, is way beyond me. Anyway, i had two cans of Salmon and did not know what to do with them, so i came on Foodnetwork's website to search for a recipe on how to cook these salmon, so i came across Paula's recipe. Like i said earlier Great Patties. The only thing i added to the recipe is just salt and pepper, a little cayenne pepper, some evaporated milk with water to keep the patties moist inside. I did not have any fresh lemon, i only had bottled lemon so i used that. It yield 11 patties. This is a keeper.

    I like the green onions in this recipe. I have always used regular onions, which I didn't too much care for. My kids LOVED this and wanted more...
