    I can't remember when I last had Salmon Croquettes or what we just called Salmon Patties but just like Paula; I had to take a bite right after frying (testing you know and one bite turned in to a whole pattie. They brought back some long lost memories and will definately be a a good staple for fast, convenient, and affordable meals.

    I had to giggle when I saw Paula make this recipe because it reminded me of the wonderful croquettes my own mother used to make when we were growing up and she and my father worked to make ends meet. Of course as kids we knew nothing of it, we just thought how lucky we were to have great food like these salmon croquettes (although we didn't call them croquettes, that would have been way to fancy, we just called them 'patties'. These are perfect just as written (and the way my mother made them, but feel free to express yourself with additions and tweaks. Like various other reviews I also make these with a white sauce, just like my mother used to make. Thanks Paula for a simple, VERY inexpensive and nutritious recipe, it brought back sweet memories for me. I like the idea of serving these with grits as Paula and another reviewer suggested, I'll give that a try too. These are great, you've just got to try them.

    I used 1 six-ounce can of Kirkland wild Sockeye salmon, drained. It provided the perfect amount of salmon to bind with the egg and breadcrumbs. I didn't add any additional seasoning, but just stuck to the recipe as written. We enjoyed the croquettes very much and they will definitely become a staple meal in our house. Thanks, Paula, for providing such a healthy and inexpensive meal.

    I am a big fan of Paula's but this recipe needed some work. When I first saw it, I had a strange feeling it would be very bland although I have never made Salmon croquettes before and had no idea what went into them. I tasted the fish mixture once I was ready to form the croquettes and oh boy was that boring! I added old bay seasoning, a little cayenne, 2 tsp lemon juice, and a bit of salt and they came out fantastic! I also added a little mayo to the mix, not much only about a 1/4 cup and this made the filling nice and moist and delicious. I will definitely make these again! My boyfriend was raving and kept insisting they were the best he's ever had!

    This recipe has been such a winner that my husband loves it every time I say I'm making your salmon croquettes! I've added some red pepper flakes for a spicy flavor and yum!!!! We love you Paula!!!

    This recipe reminded me of one my Mom used to make. It was simple, fast and affordable. A great way to get your family to eat those Omega 3's.
