Ingredients
- 2 cups cooked, flaked salmon
- 2 hard-boiled eggs, crushed
- 1 red or green bell pepper, diced
- 1 cucumber, peeled, seeded, and diced
- 1/2 cup chopped onions
- 4 to 5 tablespoons mayonnaise, or enough to moisten
- 1/4 teaspoon cayenne pepper, optional
- Salt and pepper
- 1/2 lemon, juiced
Directions
In a large bowl, gently toss together the salmon and crushed hard-boiled eggs. In another bowl, combine bell pepper, cucumber, onion, and mayonnaise. Add seasonings and stir to combine. Pour mixture over salmon, add lemon juice, and toss lightly to combine. Serve over lettuce or as a sandwich.

I made this recipe without the cucumber (I simply didn't have any, and it was still terrific! I am definitely making this again, but with the cucumber!

This salmon salad is nice and light. I left the cayenne pepper out (too hot. I used a green bell pepper and an english cucumber instead of a regular cucumber. I was surprised at how well the cucumber complimented the salad. The lemon was not over powering to my surprise. I will be making this again.

Imade this for two of us, and knew there would be leftovers, so I left out the cuke & pepper, thinking they might get too wet in a day or two.I also used greek yogurt, no mayo to make it healthier, and we both really liked it. Saved to my recipe box. Leslie
