The family consensus on this is about a C-. For some reason, the peach and sausage combination just didn't work for the aggregate taste buds of our 8 testers (from early teen boys to a few 60+ers. It's a fair amount of prep time and effort for a dish that, for us, wasn't worth it, given other recipes for pork chops.

This was excellent. A definite company-worthy dish! I'll admit to one error; I didn't read the entire recipe for the number of pork chops. So I made the stuffing as indicated (using half of a rolled package of sausage - that's what my wife came home with. At least I didn't have to remove it from the casing and then wondered why there was so much stuffing for two pork chops. Then I read "six porkchops". Well, I really, really stuffed those two chops! We cooked up the excess stuffing as a side dish. We thoroughly enjoyed this, and will make it again, probably this week to use the extra peach and extra sausage. The pork chops were so juicy, and the stuffing is great.

being empty nesters for the second time to our children and grand children I have taken up testing new recipes for my husband as my new hobby. I tried this tonight and we loved it.
The only "tweak" was using mango which are ripe and plentiful now instead of peach, pepper jack cheese instead of adding red pepper flakes, and since we had no fresh sage I found a roll of jimmy dean sage flavored sausage left over from some occasion and used that instead.
Maybe this is more than a tweak but it works for me! Hope this adds to someone's dish in the future :

My family absolutely loved this recipe. Before the meal was over they all said that I could make it again anytime. My dad can't have dairy, so I left the cheese out of his and he was just as happy. Will add onions next time, in the very near future. Thanks Paula for sharing this.

These were AWESOME. Even my 4 & 6 year old nephews ate every bite. I had to change it a little. We can't have very hot (spicy food for medical reasons so I used a tiny pinch (my nephew's of the red pepper flakes. I had Maple breakfast sausage so we used that & pounded pork loin chops thin & rolled them around the peach & sausage stuffing. The boys asked when I would make it again! It's a keeper & going into the recipe box.

Great chops. better with spicy sausage. also adding sauteed onions and garlic gives it a better flavor, but I have to admit I love food with a kick.

Very good. Used sweet Italian sausage and left out the pepper flakes. Also sautéed the chops in the same oil from the sausage. Liked the combo of sausage and peaches. Used mozzarella instead of Monterey Jack.

This was very good. My whole family liked it. I used spicy sausage and skipped the red pepper step and used the grease from the sausage to brown the chops in. I think I would use less sausage and more peaches. The combo of the two was really yummy.

I made this dish for company and everyone loved it. However, I used apples instead of peaches and Paula was right either one will work. For a little more flavor I will use the hot sausage instead of sweet. I also made the roasted cauliflower and it too was a big hit. I will definitely make both recipes again.
