Ingredients

  • 1 (1-pound) package ground sausage
  • 3 cups baking mix (recommended: Bisquick)
  • 4 cups grated sharp Cheddar
  • 1/8 tablespoon pepper

Dip:

  • 1 cup mayonnaise
  • 1 tablespoon mustard

Directions

Preheat the oven to 375 degrees F. Spray a baking sheet with vegetable oil cooking spray.  Combine all ingredients in a large glass bowl. Mix well with your fingers. The mixture will be very crumbly. Form into 1 inch balls, squeezing the mixture so it holds together, then rolling it between the palms of your hands to form balls.  Place the balls on the baking sheet. Bake for 18 to 20 minutes or until golden brown. To prevent sticking, move the balls with a spatula halfway through cooking. To make the dip, combine the mayonnaise and mustard. Serve with sausage balls.

    I've read all the comments people have left about the quantity of ingredients and let me just say, the problem is the mixing.... I've been making these ,with these quantities, my entire life and they are always moist and delicious and gobbled right up. The mix will NOT be too dry if you MIX MIX MIX!!! You have to knead the mix like CRAZY. It takes me about 30 minutes of kneading and they will then be super moist and perfect. When it comes to sausage balls like these, you can't over knead and the more you do, the better they'll be. Trust me on this! Read more

    Wrong Amounts of Ingredients

    The ingredients are correct, but the quantities need to be tweaked. For moister, 'meatier' sausage balls, use 1-1.5 cups of... biscuit mix and a cup of cheese. For more breaded sausage balls use 2 cups of biscuit mix and however much cheese you desire. 3 cups of Bisquick is WAY too much and you will never be able to get the balls to actually stick together! Also, I cooked these at 375 for 10-15 minutes and they were getting brown and crisp around edges so make sure and keep your eye on them.Read more

    I've been making these for years but I don't use near this much bisquick. I actually probably only use 1 cup- just enough to... hold everything together. I actually don't even measure the bisquick anymore. I just add in until the mixture is stiff- I'm guessing that's about a cup. Mine always turn out great! I only use 2 cups of cheese.Read more

    Too dry and bland

    These were terrible. I mixed the recipe as stated (although substituting hot for regular sausage) and mixed for a good 10... minutes and it was a dry crumbly mess. Finally I added an egg to get the mixture to bind together. They were horrendously bland and that's even with HOT sausage! They tasted like dry bisquick. Not Paula's best work, by far. Read more

    Recipe is good, but missing something

    I think the recipe is fine, but I do a few things for personal preference. I add about 1 tsp worchestershire sauce, 1 tsp... hot sauce (I like Crystal brand), and about 2 tbsp spicy mustard to the recipe. Between the additions I suppose it keeps it moist. I like a lower temp and longer bake. Read more

    Just needs a little milk!

    We thought the mixture was a little dry, so I looked at several other sausage ball recipes and decided we should add 1/2 cup... of milk. Fixed it right up! The finished product isn't dry at all and taste delicious. We are adding more sausage the next time we make it, just because that's how we like them. :-)Read more
