Ingredients

  • 1 (1-pound) package ground sausage
  • 3 cups baking mix (recommended: Bisquick)
  • 4 cups grated sharp Cheddar
  • 1/8 tablespoon pepper

Dip:

  • 1 cup mayonnaise
  • 1 tablespoon mustard

Directions

Preheat the oven to 375 degrees F. Spray a baking sheet with vegetable oil cooking spray.  Combine all ingredients in a large glass bowl. Mix well with your fingers. The mixture will be very crumbly. Form into 1 inch balls, squeezing the mixture so it holds together, then rolling it between the palms of your hands to form balls.  Place the balls on the baking sheet. Bake for 18 to 20 minutes or until golden brown. To prevent sticking, move the balls with a spatula halfway through cooking. To make the dip, combine the mayonnaise and mustard. Serve with sausage balls.

    Vegetarian Version

    I just put a vegetarian version of this in the oven. I used a package of meatless sausage, decreased the amount of baking mix... to two cups, and used leftover shredded cheese I had (it was about 4 cups, I think). When I mixed these three, it didn't seem moist enough because the meatless sausage is really dry. So I 'eyeballed' about a cup of milk to bind everything together. They'll be ready in a few minutes, so I'll let you know how they turn out at a later time. NOTE: I used 'Heart Start' Bisquick and skim milk.Read more

    Too much Bisquik and Cheese for the Sausage amount

    I had to alter the recipe to have 2 lbs of sausage for 4 cups of cheese and 3 cups of Bisquick and still it was very dry and... cakey. Without this change these would have been Bisquick and cheese balls with barely a hint of sausage. I was not impressed...Read more

    Her recipe in her cookbook calls for only two cups of cheese but only yield 3 dozen instead of five. The extra cheese made... them somewhat dry so maybe less cheese would be good. I actually added them to Ramen Soup and we loved them. Next time I will try the dip that goes with them.Read more

    We have always loved these especially on a Sunday morning or for a party treat. The original Bisquick recipe calls for 1/2... cup of milk also. When made that way they are not too dry however, don't pour it in all at once but gradually so as not to over moisten.Read more
