I have always wanted to try my hand at making gumbo and boy oh boy am I glad I started here :. This was a wonderfully rich and slightly spicy gumbo. I had a dinner party last night and everyone loved it. I thought I would have plenty left over but they couldn't seem to get enough. Of course, everyone was really full but there went my leftovers :. Next time I'll make a double batch which will probably be in a couple of days :. I'm cravin' me some delicious gumbo, Yum! :.
I substituted the scallops, crab meat, and oysters for extra shrimp, extra sausage, and chicken because that is what I had on hand. I did not use chicken base or file powder because I could not find them --The results were wonderful even with the little changes I made to the original recipe so don't let not having a few things on hand stop you from trying this gumbo. It is well worth the effort. Even my 8-year-old is anticipating the next batch :.

I have made this gumbo for many family gatherings and always get rave reviews! I always make a double batch so there is no fighting for leftovers. My husband took it to work for his crew and they loved it also and requested the recipe. Thanks Paula!

I made this for several parties without the sausage. Vegetarians and carnivores alike LOVED IT! All I heard after their first bites were "umm..ahh..ohh" and someone even suggested I open a gumbo catering business. Other seafood gumbos I've tried have been to heavy and similar to chicken gumbos. The canned tomatoes and low amount of flour really make this recipe stand above all the rest and it has layers of flavor too!
