We eat a lot of salmon in Alaska. This dish certainly stands on its own and was good for a change. Nothing I can fault with the dish - yummy. Instead of rice, I'd like to serve it with quinoa next time. I'd only go with half an onion - just personal preference and don't think it'd be missed amongst all the other ingredients. Very aromatic - smelled great soon as it got in the oven!

Although I was out of strawberries and oranges (I used small exotic sour oranges, the dish was unbelievable! This was the first fish dish AND hot dish I have ever made, and it came out PERFECT. I would recommend this dish to anyone, especially those amateur chefs who love salmon but don't trust they can perform - YOU WILL WITH THIS RECIPE.
Thanks Paula Deen

I love this dish, I have made it many times and even people who do not really like salmon love it!The flavors are wonderful however I use an orange or yellow pepper instead of green.

Very tasty! I used red & yellow peppers for color. I totally uncovered the foil on top & let it cook for an additional 8 minutes at 425 degrees ~ felt it needed the additional cook time.

I liked this dish. The people I made it for loved it. It looks nice, the salmon has good flavor. I liked wrapping it up in foil and just sticking it in the oven - easy.
However, I think there are so many ingredients that it made the dish a bit expensive and while it looks nice, not everything added to the flavor. I'd say the green and red bell peppers weren't necessary. I didn't really taste them after it cooked. Also, I would probably used canned mandarin orange pieces next time like some suggested and use the syrup form the can too. The strawberries were my favorite part and I didn't use a whole pint.
I would definitely make this again, but a bit modified.

This dish was pretty easy to make and the flavors a bit on the unusual side, but overall it looked and tasted ridiculously delicious!

The dish looked suspicious on the table. It 'looked' lively with all of the brilliant colors however, it lacked in taste.
The combination of peppers, strawberries and orange slices was not disgusting. It did not taste bad. It just didn't do anything for the salmon. The overall taste could be described as flat.
We love receipes from the Food Network and all of it's chefs and cooks. Every once in a while they put together ingredients that don't need to go together just to squeeze out that one additional recipe and this is one of them.
This one is OK to delete.

I was nervous about the unique ingredients. My husband and I loved it! To bring the rice together with the fish, I added bell pepper, orange zest, garlic powder, and a drop of honey to the rice as it was cooking.
Very nice touch. I will definately prepare this dish again.
THANKS PAULA!
