To the Brabants: Use the house seasoning or any other seasoning to taste. Since the recipe calls for salt and pepper already, I would use very little, or just use the house seasoning as it contains salt and pepper. Taste it and add more only if it needs more--according to your taste. Remember, you can always add more, but you can't subtract it once it's added to a recipe. I try to use less salt and my husband adds more at the table as he likes food saltier than I do. I usually add more pepper at the table as I like food spicier.
Beans usually call for more seasoning as they are bland, however the bacon and sausage probably are salty and spiced already, so taste first. Hope this helps.

My dad is a huge fan of this recipe. Makes the house feel and smell warm.
On a seperate note.. Paula Dean is a southern cook and in the south there is a lot of fats used in meals. All chefs (home and professional cook how they choose to cook. Why would you look for a recipe from her if you are so strict about fat. Just like a radio station, you don't listen to 101rap to find classical. Alter the recipe or don't use it.

Can someone please let me know how much of the house seasoning do you use in the recipe ??? I know I DO NOT use the whole amount that you make .... but it does not specify how much to use ! Please help ! Thank !!!

Sassy, you have every right to choose how you want to eat and the food you feed your family. It's not your place to judge or choose how others want to eat. They will pay the consequences if there are any. I get tired of the condescending tone of so many on these reviews. If you think it's too much fat, then don't eat and leave others to decide if they want to or not. No one needs your approval. Paula doesn't force anyone to make her recipes! Alot of the other chefs/cooks add a ton of butter & prepare high fat dishes too but don't seem to come under fire like Paula does.

Excellent Recipe!
I added some smoked ham and ham bone left over from a ham I smoked, and with the bacon it really was good with the added flavor from the smoke. The only thing I did different was that I crisped up the bacon and removed 3/4 of the grease from it before adding the butter and sauteing the veggies..two thumbs up :

I made this soup the day that the show aired and was the best I ever had. I lost the recipe so looked here today so that I could make it tomorrow. Having a cold spell coming so this will be perfect to warm us up.

This was fantastic! I didn't use the sausage as I didn't have any, but I did throw in the bone and left overs from a honey baked ham. I used chicken stock-in-a-box and all the rest as written. The best I've ever had!!! I will make it over and over. One day I may even use the sausage. :o
