I just pile all the leftovers from Sunday dinner into a casserole dish and put it in the refrig. Then Monday night I add the biscuit layer and put it in the oven. Super easy and delicious.

I saw this recipe on Paula's Party, and yes, on the show she did use leftover roast, gravy, and potatoes. I've done it that way whenever I've made it (3 or 4 times now, and it's delicious every time! My only qualm is that it takes over an hour of baking for the biscuit mix to set on mine! Once it does it's wonderful (the melted butter makes it to die for, but am I the only person who gets runny bisquik like that? Now that I know to plan ahead, though, the extra baking time isn't an issue. This has become a staple in our house!

The recipe name does not match the recipe itself. I was excited to find a recipe for Shepard's Pie to use up my leftover mashed potatoes and pot roast. I was sorly disapointed because the recipe only gives fresh ingredient amounts. Where is the leftover beef roast and mashed potatoes? My family did not care for the sour cream in the mashed potatoes. I like the concept and will probably try it again, from a different recipe.

I grew up on my mother's version of chepherd's pie which used leftover pot roast, gravy, peas, etc, from the previous dinner all run through her meat grinder and mixed with leftover gravy with leftover mashed potatoes on top. I looked forward to Paula's version, but was disappointed to find NO leftover roast anywhere in the recipe - just raw ground beef that needed to be browned. I have not made this, but gave it a 3-star rating because I'm sure I'd like it based on the ingredients. However, I'd like to actually SEE a recipe with the leftover roast as an ingredient - I'd like to see how she treats it. Ground beef is NOT leftover anything!!

I used instant potatoes...worked fine. I think next time I'll use more beef gravy with the roast meat. And I used a Jiffy Cornbread for the topping. Great!
Served with a salad and fruit for dessert...wonderful meal.

I made this meal for my In-laws for dinner last night, It was a hit. They couldn't get enough. My husband Kept saying " baby that was so amazing". Try this recipe.

It also leaves a lot of room for your own changes. I used instant potatoes and left-over roast beef. I also added beef gravy and left the veggies for a side. It turned out great!
