Ingredients

  • 6 large Idaho potatoes
  • Vegetable oil, for coating
  • 8 tablespoons butter
  • 2 cups grated cheddar cheese, plus more for sprinkling
  • 2 cups grated Monterey Jack
  • 2 cups sour cream
  • Salt and pepper
  • 1 pound shrimp, peeled and Sauteed
  • Paprika

Directions

Preheat oven to 350 degrees.

Begin by washing potatoes, drying them, and gently pricking them with a fork on the sides. Coat each potato with vegetable oil, place on foil covered pan, and bake for approximately 1 hour.

Place the butter in a large bowl. Remove the potatoes from the oven and slice each potato in half. Gently scoop out the potato and place in the bowl. Using a mixer on high, mix the potatoes, butter, sour cream, salt, and pepper. Fold the shrimp and both cheeses into the mixture. Gently stuff the mixture back into the potato shells, making sure not to break them. Pile the mixture as high as you can on top of the potato shells. Sprinkle each potato with cheese and paprika for color. Bake in the oven for approximately 20 to 30 minutes until browned on top.

    The first time I made this was for my parents when they came over for a visit. My dad was skeptical to say the least. He... changed his mind on the first bite, though. I made an extra potato thinking I'd have it to bring to work for lunch the next day, but it didn't survive. He felt guilty about eating it, but that didn't stop him! The only real change I made (other than making it a little spicier) was to add green onions. I have the potatoes in the oven now to make again! :)Read more

    So i decided to make this for my valentines day dinner. Well I was planning on only making 2 potatoes and didnt bother to cut... down the recipe till it was too late! WELL I made more mashed potatoes, added lobster and put it in a giant iron skillet then added some shavings of sharp cheddar cheese on top and threw it all in the oven for about half an hour till the top was hot bubbly and brown. then BAM it came out AWESOME!     This was very easy once the potatoes were baked. I baked mine earlier in the day at 400 degrees for 60 minutes. I coated... them with vegetable oil and salt. I sauteed my shrimp in olive oil and sprinkled them with a little cajun seasoning and garlic powder. The rest I made as written. They were wonderful! The only thing I might add next time is putting some green onions in with mix. I think the color would be nice and I love the onion flavor too. Thanks for the recipe. Read more

    Tasty but mine were a mess

    I made these tonight, but must have done something wrong. I piled the topping high and it ran all over. I pulled them out of... the oven and it was like twice baked soup almost. Still tasted fabulous, I made half of them with shrimp and half with bacon.Read more
