Paula: OMG As usual you are a hit. I unfortunetely can't eat sour cream, so I added fresh Garlic & spinkled flavored bread crumbs on top. It was an incredibly tasting side dish. I also cooked skirt steak, corn on the cob, marinated carrots with cinnamon, syrup.
Thank you again for a great recipe. You are the best..

This dish was sooooo delicious! I added some spices and green onions and it was delectible. If you do not want to take the hour to bake the potatoes- I just puncture with fork, wrap in paper towel and put them in the microwave for about 10 minutes (5 on each side until potatoes are tender enough the scoop out the center.

The first time I made this was for my parents when they came over for a visit. My dad was skeptical to say the least. He changed his mind on the first bite, though. I made an extra potato thinking I'd have it to bring to work for lunch the next day, but it didn't survive. He felt guilty about eating it, but that didn't stop him! The only real change I made (other than making it a little spicier was to add green onions. I have the potatoes in the oven now to make again! :

I added chopped, precooked, smoked bacon bits to mine and served with a small garden salad. Everyone in the family was overwhelmed.

So i decided to make this for my valentines day dinner. Well I was planning on only making 2 potatoes and didnt bother to cut down the recipe till it was too late! WELL I made more mashed potatoes, added lobster and put it in a giant iron skillet then added some shavings of sharp cheddar cheese on top and threw it all in the oven for about half an hour till the top was hot bubbly and brown. then BAM it came out AWESOME! So even though i made a boo boo... still awesome :D

This was very easy once the potatoes were baked. I baked mine earlier in the day at 400 degrees for 60 minutes. I coated them with vegetable oil and salt. I sauteed my shrimp in olive oil and sprinkled them with a little cajun seasoning and garlic powder. The rest I made as written. They were wonderful! The only thing I might add next time is putting some green onions in with mix. I think the color would be nice and I love the onion flavor too. Thanks for the recipe.

I made these tonight, but must have done something wrong. I piled the topping high and it ran all over. I pulled them out of the oven and it was like twice baked soup almost. Still tasted fabulous, I made half of them with shrimp and half with bacon.

Made these for a New Years Party that we go to every year at our friends back in 2006. There were a lot of people there and they were the hit of the party. They were so great and such a hit, I also made them in 2007 for the party.
I didn't realize exactly how big of a hit they were until I didn't make them for 2008 New Years party. I don't think I have seen a group of people get so dissappointed over food before and in a joking way ( I think , they told me don't show up this year 2009 unless I bring those potatos :
So here I am making those potatos !!
One of the things that I add to the mix is I add scallops with the shrimp.
When I cook the shrimp and the scallops I add garlic and seasoning with them and it really adds a lot of flavor to the potato.
So my advice is, cook these at home and have people eat them there, If you bring them to a party they will expect them all the time :
Thanks Paula,
Henry from New Hampshire
