Ingredients

  • 1 (18.25-ounce) box white cake mix
  • 1 (3-ounce) box strawberry-flavored instant gelatin
  • 1 (15-ounce) package frozen strawberries in syrup, thawed and pureed
  • 4 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • Strawberry cream cheese frosting, recipe follows
  • Strawberry Cream Cheese Frosting
  • 1/4 cup butter, softened
  • 1 (8-ounce) package cream cheese, softened
  • 1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
  • 1/2 teaspoon strawberry extract
  • 7 cups confectioners' sugar
  • Freshly sliced strawberries, for garnish, optional

Directions

Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.

In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.

Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.

For the frosting:

In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup of the strawberry puree and the vanilla extract. (The rest of the puree is leftover but can be used in smoothies or on ice cream for a delicious treat.) Gradually add confectioners' sugar, beating until smooth.

Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

    This cake came out perfect for my daughter's 11th Birthday. I read many of the reviews and followed a few tips. I bought... the 2 10 oz. boxes of frozen strawberries in syrup. After pureeing, I measured out 1 3/4 c. for the batter and 1/4 c. for the icing. Had less than a half cup left which my daughter ate. Mixed and baked the cake as instructed. For the icing, I did as suggested and left out 2T. of the cream cheese and 1 1/2 t. of the butter. I incorporated a little less than 1 t. McCormick Imitation Strawberry Extract. Couldn't find just "extract". The icing was fabulous. This cake was easy and fast to make and vanished very quickly. Thanks for a perfect birthday cake Paula!!!Read more

    I wanted to make a cake for my daughter's 18th birthday...something that was a little different, since we usually go for... chocolate. Strawberries are in season here in Florida right now, so I thought a stawberry cake would be great. I was a little disappointed the cake called for frozen strawberries and extract, which was "imitation flavor" (there may be pure extract out there, but not at my local store). The good news is you can make it year round!!! (I may experiment with fresh strawberries marinated with sugar and pureed the next time). After reading the reviews, here are my tips to address some of the problems people had...1.) Buy 2 10-oz pkgs of frozen stawberries in syrup. After pureeing, I had a little more than 2 cups. Since the cake called for 15 oz in the cake, I used 1 3/4 cups in the batter. After using another 1/4 cup for the frosting, there was just a small amount left over. 2.) Sift the powdered sugar and spoon into a measuring cup to get 7 cups. The frosting wasn't at all too sweet. I had a tiny bit of "grittiness," so next time I'll be sure to really beat the frosting well to dissolve all the sugar. 3.) Based on others' comments, I was very careful to measure only 1/4 cup puree into the frosting. It did have a very soft texture, so I refrigerated it for the first couple of days. I accidently left it on the counter overnight the second night, but it was perfectly fine the next day.Read more

    Sickly sweet!!!!!

    I made this for my 14 year old son's birthday cake, and even he couldn't take the level of sugar. The cake was excellent... but the frosting was awful, so I balanced out my rating to 3 stars. This very sweet cake needs to be offset with a frosting that has less than 7 cups of confectioners sugar. Next time, I'll try it with lightly sweetened vanilla whipped cream with strawberries.Read more

    Best strawberry cake ever - strawberry extract makes a big difference!

    This cake was super moist and flavorful, although baking time was more like 35 minutes. Just keep an eye on it... Also, it... could have been a bland batch of strawberry puree, but I tripled the amount of strawberry extract to get a good strawberry flavor in the icing. BTW- I've had the cake with vanilla extract as well, and we all agree the strawberry extract makes a big difference. Struck out at Kroger and Publix, but I finally found some at Ingles.Read more
