I used a 5 pound top sirloin cut of meat. The meat turned out beautifully--juicy and tender. I eliminated 1 star though because the cooking time in this recipe is wrong. I read other previous reviews so I was somewhat prepared for this. If you cook it according to the directions, the meat will be raw. Use a meat thermometer and watch closely! I cooked at 250 for 1.5 hours and then 350 for another hour for medium. If I was to do it again I would maybe allocate more time and cook it at 250 for 4 hours. The creamy sauce is nice, but not necessary bc the meat and juices are so good!

No matter what you do, an eye of round is tough. We followed the recipe to the iota.....still tough.

This was very easy for me. I cooked a 3 pound roast. I seared all sides. Then baked it at 350 for 45 min. I also used a beef broth on the bottom of the pan. My husband and family loved this meal. They have asked for it several time since. They also loved the mayo sauce. My husband only asked if I would add a little horseradish. It gave it the kick we were looking for in the sauce. We were very pleased with this recipe.

I unfortunately based my serving time and my side dishes on the time noted in the recipe however it took much longer over 3 hours (was 5.5 lbs and needless to say knocked everything off....I will say that when all was said and done it was very good.

I loved this and it was a hit at my Christmas Dinner! I did have to cook it longer than 2 hrs, but I anticipated that and watched the meat thermometer for when it was done. It was 5.5 lbs and a thick cut of meat so it took closer to 3 hrs but it was so worth the wait! I will be making this again!

Delicious! Especially loved the creamy herb sauce with the roast! I would say the 5 lb roast feeds about 6-8 adults. The cook time would not have been long enough for the cut I got at the store--but I realized this beforehand (very thick!. I talked to the meat guys and they suggested this: follow all directions but for the first 20 minutes bake it at 450 degrees and THEN adjust it to 250 degrees. It still took 4 hours to make the slow cooked roast though. For medium meat, just use your meat thermometer to get to 140 or 142 degrees F.
A special recipe! I will definitely make again! A new Christmas Day tradition!

I cooked this instead of the traditional ham that we always have and it was wonderful. My picky eating kids loved it. They actually had 2nds. A hit with my family. Will be passing it on to my mom.

Very disappointed. Cooked a 5 lb boneless round roast and after 2.5 hours, it was still quite raw.
